BAKED MAPLE CHICKEN THIGHS (Boneless and Skinless)

Ingredients

12 boneless and skinless chicken thighs 2 tablespoons olive oil 1 teaspoon sesame oil 2 teaspoons kosher salt (to taste)

2 tablespoons apple cider vinegar 3 pressed garlic cloves 2 tablespoons fresh parsley, finely chopped

½ teaspoon black pepper 2 tablespoons maple syrup

Instructions

1. Preheat oven to 425 degrees. 2. Place the chicken thighs in a large bowl. Add the salt, pepper, oils, maple syrup, apple cider vinegar, garlic, and one tablespoon of chopped parsley. Mix and let sit at room temperature for 30 minutes. 3. Mix again and transfer the chicken thighs to a 9 x 13-inch baking dish. 4. Bake for 20 minutes, or until the thighs reach an internal temperature of 150–155 degrees. Move the baking dish to the top rack and turn the broiler on to high. Broil for a few minutes, constantly watching, until slightly browned. 5. Remove the thighs from the oven, baste with pan juices, and let rest for about 5 minutes. Sprinkle with the remaining chopped parsley and serve.
