BAKED HONEY MUSTARD CHICKEN

Ingredients

8 boneless chicken thighs ½ cup brown mustard ½ cup honey 2 teaspoons kosher salt (to taste)

½ teaspoon black pepper 2 tablespoons maple syrup 2 tablespoons apple cider vinegar 3 pressed garlic cloves 2 tablespoons fresh parsley, finely chopped

Instructions

1. Preheat oven to 425 degrees. 2. Place chicken thighs in a large bowl. Add the salt, pepper, mustard, maple syrup, apple cider vinegar, garlic, and one tbsp. of chopped parsley. Mix and let sit at room temperature for 30 minutes. 3. Mix again and transfer the chicken thighs to a 9 x 13-inch baking dish. 4. Bake for 20 minutes, or until the thighs reach an internal temperature of 150–155 degrees. Move the baking dish to the top rack and turn the broiler on to high. Broil for a few minutes, constantly watching, until slightly browned. 5. Remove the thighs from the oven, baste with pan juices, and let rest for about 5 minutes. Sprinkle with the remaining chopped parsley and serve.
