TASTY PAN-ROASTED CORN

Ingredients

2 cups frozen yellow corn, thawed 2 cups frozen white corn, thawed 1 tablespoon butter ½ tablespoon olive oil 1 tablespoon garlic, finely chopped ½ cup onions, finely chopped 1 tablespoon Italian seasoning salt and pepper to taste

Instructions

1. Place oil and butter in a large skillet. Under low to medium heat, cook butter in oil for 1 minute, until completely dissolved. 2. Add onion and garlic. Cook 1–2 minutes, while stirring. 3. Add yellow and white corn, Italian seasoning, and salt and pepper. 4. Stir continuously until both yellow and white corn are cooked but still crunchy. 5. Serve hot.
