LEMON PARMESAN ROASTED BROCCOLI

Ingredients

24 ounces broccoli florets 2–3 tablespoons olive oil 2 garlic cloves, minced ½ cup grated Parmesan cheese Juice of 1 lemon

2 lemons cut into wedges Salt and pepper to taste

Instructions

1. Preheat oven to 425 degrees. 2. Spray a baking sheet with non-stick spray and set aside. 3. In a large bowl, combine broccoli, olive oil, salt and pepper, garlic, lemon juice, and half of the Parmesan cheese. Toss to mix flavors. 4. Arrange broccoli in a single layer on the baking sheet and surround with lemon wedges, as you see fit. 5. Bake for 12–14 minutes, or until tender. 6. Remove from oven and sprinkle with the rest of the Parmesan cheese. Squeeze lemon wedges over broccoli if desired. 7. Serve hot.
