OVEN-ROASTED POTATOES
3 pounds baby potatoes, halved or quartered to bite-size 2 tablespoons extra virgin olive oil 1½ teaspoons garlic powder 1½ teaspoons kosher salt ½ teaspoon freshly ground black pepper Ingredients
Instructions
1. Preheat oven to 400 degrees with rack in upper-middle position. Line a large sheet pan with foil and set aside. 2. In a large bowl, combine potatoes with all ingredients. Toss well to coat thoroughly. Spread potatoes in a single layer on foil-lined sheet pan. 3. Roast 45–60 minutes, until nicely browned (flip once halfway through cooking time). 4. Toss finished potatoes and serve immediately.
