THE FRIEND WHO CHANGED MY LIFE Happy Friendship Week!
You have friends, and you have family — then you have the family that you’ve chosen, and they have chosen you. When I heard that Friendship Week is in the third week of August, I didn’t need any more excuses to talk about my dear friend Mitch, who is like a brother to me. I wouldn’t have expected to be deeply close friends with Mitch. Toward the end of 2011, I’d just gotten back from Afghanistan and, while I wasn’t necessarily in a “dark” place, I wasn’t thriving either. I felt like I was at a standstill. Even though I had a ton of friendships at the time, they were all very surface level. See, when you’re in the Marine Corps, you develop real friendships with your unit of 30–40 people, and you’d even die for them — but I still lacked any one particular friend I could fully open up to and talk to about a lot of things. Then, Mitch became newly stationed at my unit and lived just down the hall from me — yet, we met almost coincidentally. The first time I met Mitch was when we saw each other at the same church on Sunday. As soon as we started talking and realized how similar our interests were, we were pretty much inseparable. We had a ton of fun camping or climbing with friends and spent almost every weekend in Joshua Tree National Park, cooking good food and having deep conversations. There's a lot of great developments in my life that I can attribute to Mitch’s incredible support. At the time of my life when Mitch became my close friend, I was struggling with my faith. I wanted to serve others and be involved with a local church because I didn’t have that opportunity in Afghanistan. But when I got back, it was challenging — Sunday would roll around and I wouldn’t go.
Not with Mitch around, though. On Sunday morning, Mitch would knock on my door an hour before service, and he’d keep knocking until I was ready to go. We did a ton of volunteer work together, and he ended up being a really good influence on me. Honestly, Mitch is a good influence on anyone that comes across him. When you’re around a genuinely great guy like Mitch, it inspires you to elevate your standards for yourself — you can’t help but want to be a better person. Throughout every stage of my life since meeting him, he’s been an awesome source of support, advice, and encouragement. Now that he has a wife and kids of his own, and I have my wife and daughter, life does get busy. But even when Mitch and I haven’t talked in a while, everytime we talk, it’s like we just went on a weekend camping trip yesterday. He’s the family member I got to pick — and I’m sure lucky he picked me back. If you have a close friend like that to celebrate this Friendship Week, make sure you give them a call. Don’t let those connections slip through the cracks, because if you keep making the effort to show you care, that friendship can and will last a lifetime.

DIRECTIONS
1. Preheat your grill to medium heat or your oven to 425 F. 2. In a large bowl, add all of the ingredients and mix well. Divide into four equal portions. 3. Prepare four 16-inch pieces of foil and place a portion in the middle of each section. Wrap each foil piece tightly and avoid holes. 4. Grill each foil packet for 20 minutes, flipping halfway through. You can also bake each packet for 20 minutes at 425 F.
