The story of the Viberti Giovanni winery begins when Cavalier Antonio Viberti buys the Locanda del Buon Padre. It was the year 1923 when Antonio began to produce wine for the guests of his Locanda in the basement of the Buon Padre. Today the Viberti Giovanni winery continues its history with the third generation. In creating what was to become known as the Bellini cocktail in 1948, Giuseppe Cipriani was once again inspired by a painter, the fifteenth century Venetian painter Giovanni Bellini. Peaches were in abundance throughout Italy from June through September, and he had a predilection for the white ones. So much so, in fact, that he kept wondering whether there was a way to transform this magic fragrance into a drink he could offer at Harry’s Bar.

He experimented by pureeing small white peaches and adding some Prosecco. Those who tested this new concoction gave it rave reviews, and he was encouraged to pursue his alchemy. He named it Bellini and from that day on the drink became part of Harry’s Bar culture and all Cipriani restaurants around the world.

Austin and his team know just how unique each part of Paso Robles can be. We seek out the vineyards from all over the Paso Robles AVA that best define Paso’s Cabernet Sauvignon. What you may find surprising is that east of the Salinas River, atop ancient flood plains and sea beds, is where we find the soils that drive the wine quality. Our region is well-known for its calcareous and limestone soils. We love them…in moderation. We find that a good combination of broken-down calcareous stones, disintegrated bedrock and gravel combined with loamy soils make magic! Some of our favorite vineyards are located within the Creston District and the Estrella District. Both are on the edges of ancient river beds where rocks wore down and mixed with the alluvial soils from the nearby hills. These special vineyard sites provide not only the right soil types and structure, but the right micro climate of warm days, cooling afternoon winds and cool nights. We thoughtfully direct the farming at theses vineyard sites to ensure the consistent quality of the Austin Hope Cabernet.

Tullibardine’s history of brewing and distilling dates back to 1488, when King James IV of Scotland stopped by the site, a brewery at the time, to purchase beer. This was recorded as the first public purchase of beer in Scotland. Fast forward to 1947 when distillery specialist William Delme- Evans visited the same spot and found that the mineral rich character and purity of the water from nearby springs situated in Perthshire’s Ochil Hills was perfect for distillation. The Ochil Hills are well known for the gold that was once mined from them, giving us our ‘a drop of pure Highland gold’. Using the Danny Burn as the water source, Delme-Evans converted the brewery site into a whisky distillery and named it Tullibardine after the small medieval chapel situated nearby and translating as ‘lookout hill’ in Gaelic. Tullibardine was the first distillery to be built in Scotland since 1900.

Our wine is carefully transferred from the vinification vats or barrels to the cellars by means of gravity. There it is allowed to mature in casks for 12 to 18 months. Depending on the vintage, we use a combination of oak barrels of different origins (Tronçais, Allier, etc.) and of varying degrees of toast to achieve discreet yet complex nuances of oak that are always elegantly well-integrated. Aging is the art of patience, tasting and respect for all the work that has already gone into the crafting of the wine.

There is much to be said about the allure of “Estate” wines, but as the idiom goes, variety is the spice of life. At Martin Ray, we have little qualms about dealing from both sides of the deck if the result is the best possible wine we can produce. Our estate has twelve acres of varying clones of Pinot Noir vines, but true to our motley personalities, we would be remiss to not take advantage of the extraordinary wine-growing regions that surround every side of our home in the middle of the Russian River Valley.
