Here are a few of the healthiest harvest options to put on your table this year. Pumpkin Is there anything more “fall” than pumpkins? Their rich orange is the color of the season, they make the best jack-o’-lanterns and pretty soon there will be pumpkin spice in everything! Plus, the nutritional value of this beautiful squash is nothing to scoff at. • Excellent source of vitamin A, which can help improve your vision • Rich in potassium, an electrolyte important to maintaining heart health • 20 percent of your daily recommended intake of fiber Pears Struggling with your sweet tooth this fall? Grab a pear! In addition to being a sweet alternative to artificially flavored candy, pears also have plenty of healthy vitamins and nutrients. • Full of vitamin C, which is great for repairing body tissues • Plenty of copper, which works with iron to form red blood cells • Good source of boron, a nutrient that can help your body retain calcium Cauliflower This overlooked food is full of amazing health benefits. You can use riced cauliflower as a flour alternative to

cut carbs and add nutrients to other recipes.
