Running the Brooklyn marathon on November 19th, 2017 was the greatest physical and athletic challenge of my life. But it was also one of the most fulfilling experiences of my life. Training was a key part to the success, which took close to six months and running over 400 miles. I developed a heel spur in the 1st mile of the race but continued running till the end! I knew that come Monday when I returned to work I would have the best physical therapist in the world to treat me.

At times they have to withstand up to 6 times your body weight in force. The knee joint is the second most complicated joint in the body and has to move in many directions including forward, backward, side to side and rotation.These different movements are called accessory motions and are needed for normal walking, running and bending. The definition of arthritis is joint inflammation, however the term has acquired a wider meaning. Arthritis is now used as a generic term for osteoarthritis and other conditions that affect joints. The pattern, severity and location of arthritis symptoms can vary depending on the specific form of the disease.

Typically, arthritic conditions are characterized by pain and stiffness in and around one or more joints. The symptoms can develop gradually or suddenly. Certain rheumatic conditions can also involve the immune system and various internal organs of the body. Physical therapy is an important part of the ongoing treatment for arthritis. Physical therapy strengthens, stretches and stabilizes muscles surrounding affected joints providing needed support. Oven-Roasted Root Vegetables Total: 1 hr 5 min Prep: 20 min Cook: 45 min Yield: 4 servings (8 cups) Level: Easy Ingredients • 1 large butternut squash, halved • 3 large Yukon gold potatoes • 1 bunch medium beets, tops trimmed • 1 medium red onion • 2 large parsnips (about 8 ounces) • 1 head garlic, cloves • 2 tablespoons extra-virgin olive oil • 1 1/2 teaspoons kosher salt • Freshly ground black pepper Directions Place 2 baking sheets in the oven and preheat to 425 degrees F. Cut all the vegetables into 1 1/2- inch pieces. Cut the onions through the base core to keep some of the layers in chunky pieces. Toss all the vegetables with garlic, olive oil and salt in large bowl. Season generously with pepper. Carefully remove the heated baking sheets from the oven, brush or drizzle with olive oil. Divide the vegetables evenly between the 2 pans, spreading them out to assure they don’t steam while roasting. Roast the vegetables until tender and golden brown, stirring occasionally, about 45 minutes to 1 hour. Cook’s Note: Some very large parsnips have a pithy core, which should be trimmed before cooking.
