We are very close to the Grand opening of our new Grille! It has been almost one year, the final project is going to be fantastic, and the Construction Committee hopes that you will agree. Thank you to Tom Hartnett, Steven Hendrix, Mike Pelle and Ted McLemore for all the time spent on this project. Friday Night Live still proves to be a popular event, and we will continue to bring you great local entertainment each week. As spring arrives, we have some great events planned for everyone. Check your monthly newsletter, your weekly email updates and of course our mobile app regularly for information. If you are not getting communications from the Club, please reach out to Eryn Urban at eurban@sevenoakscountryclub.com or 661-664-6418. One of our main goals at Seven Oaks, is to provide exceptional service to our members and anticipate their needs. If you would like to see something new or different on the menu, please let us know. I would like to thank all of the members that ran for the Board of Governors, in the recent election. Please congratulate our newest additions to the Board of Governors: Mr. Steven Hendrix Jr, Mr. Jeff Payne, and Mr. Jeffrey Travis. Congratulations to Mr. Tom Harnett for being nominated as the new President, of Seven Oaks Country Club. Thank you to our outgoing President Mr. Jim Varner, for a great year and your service to the club, and Mr. Mike Anderson, and Mr. Kyle Wigley for their service on the Board. I would like to welcome Tessa Cloud to the Club, as our new Assistant General Manager. She will be working with the service staff and bringing her many years of knowledge within the hospitality industry to help elevate your Club experience.

aroma without compromising the drink’s clarity or texture. This approach appeals to those who prefer a more balanced and streamlined Old Fashioned. Ultimately, whether or not to muddle an Old Fashioned depends on personal preference and the desired experience. Muddling creates a more rustic, textured drink with a deeper infusion of the ingredients, while skipping the muddling can result in a smoother, more minimalist version that shows the quality of the whiskey. Both methods have their place in the world of classic cocktails, and the choice of approach may reflect a bartender's individual style or the preferences of the drinker. The Old Fashioned remains a versatile cocktail, open to interpretation while honoring its storied history. So, no matter how you enjoy your Old-Fashioned cocktail, make sure you enjoy it with Seven Oaks!!

To muddle or not to muddle? That is the Old Fashioned question.

The question of whether an Old-Fashioned cocktail should be muddled has been a point of debate among bartenders and cocktail enthusiasts for years. Traditionally, an Old Fashioned is made by muddling a sugar cube with bitters in a glass before adding whiskey and ice. This method allows the sugar and bitters to dissolve together, creating a harmonious base for the drink. Muddling is particularly effective in releasing the essential oils from the orange peel, which adds a layer of complexity to the cocktail. For purists, this technique is essential for capturing the essence of the Old Fashioned as it was originally intended. On the other hand, some modern interpretations of the Old Fashioned argue against muddling. Critics of the muddling technique suggest that it can result in an overly sweet or bitter drink, especially when the sugar doesn't fully dissolve, leaving granules at the bottom. By omitting muddling, bartenders can create a cleaner, more refined version of the cocktail that relies solely on the flavors of the whiskey and the bitters. Additionally, the citrus peel can be expressed by simply twisting it over the glass, enhancing the

Chef‘s Kitchen

Escargot (Yield: 4 Servings)

Ingredients: 24 ea. Escargot, Drained, Reserved 2 ½ tablespoons clarified butter 1 tablespoon garlic, minced 1 tablespoon shallot, minced

½ cup shiitake mushrooms, diced ½ cup button mushrooms, diced ½ cup beef stock ¼ cup sherry 1 tablespoon parsley Salt and pepper to taste ½ cup heavy cream ¼ cup Gruyere cheese, shredded (or Parmesan if preferred) Method:

Heat butter over medium-high heat in a small, heavy bottom sauce pan, add shallot and garlic, sauté about 3 minutes, add mushrooms, continue cooking for about 3 minutes, add sherry, beef stock, salt and pepper, and heavy cream. Reduce heat to medium, or medium-low, and simmer until sauce is thickened, but not too thick. It should coat a spoon nicely. Add half of the parsley and remove sauce from heat.

Arrange drained escargot in escargot dish, top with sauce, and bake at 350º for about 15 minutes. Add cheese, and bake until cheese is melted and bubbly. Remove from oven. Flash under a broiler to brown evenly and garnish with the rest of the parsley. Serve with lightly buttered, toasted bread rounds or crostini’s.

The Seven Oaks Book Club The Seven Oaks Book Club meets each month to discuss books on a reading list which is created by mutual consent of the Book Club members. All members of SOCC are invited to attend.

Lovely One by Ketanji Brown Jackson With this unflinching account, Justice Ketanji Brown Jackson invites readers into her life and world, tracing her family’s ascent from segregation to her confirmation on America’s highest court within the span of one generation. Named “Ketanji Onyika,” meaning “Lovely One,” based on a suggestion from her aunt, a Peace Corps worker stationed in West Africa, Justice Jackson learned from her educator parents to take pride in her heritage since birth. She describes her resolve as a young girl to honor this legacy and realize her dreams: from hearing stories of her grandparents and parents breaking barriers in the segregated South, to honing her voice in high school as an oratory champion and student body president, to graduating magna cum laude from Harvard, where she performed in musical theater and improv and participated in pivotal student organizations.
