Mickey, Magic, and Marketing A Semester of Disney Dreams

Mickey Mouse, one of the most famous fictional characters in the world, is celebrating his 95th birthday this Nov. 18. It’s difficult to overstate his impact on popular culture, and there’s arguably no company on the planet more adept at marketing than Disney. That’s why it’s so exciting that my youngest daughter is taking a semester off from her marketing degree at Texas Tech to study at “The House of Mouse” itself. The Disney College Program is a competitive opportunity for students to intern and learn at Disney World. In September, Kaitlin began working as an intern for the company in Orlando, Florida, while attending classes on marketing and storytelling. The participants get behind-the-scenes tours and stay in massive apartment complexes, eating, sleeping, and breathing Disney. Kaity’s job is in Disney Springs, an outdoor complex with dining, retail, and entertainment outside the walls of the theme parks. If there’s anything Disney is a master at, it’s securing 110% of your vacation budget! She sells merchandise, which beats the food services and maintenance assignments. She is slightly bummed that she won’t be working in the park, but our family has had enough Disney adventures that I don’t think she’ll miss much. My family took our first trip to a Disney Park when I was about 3. I don’t remember much more than my dad carrying me around Disneyland in a sort of backpack. I have other recollections from my sixth-grade trip to Disney World with my grandparents. The park was celebrating its 15th anniversary, so many extra festivities were around. Best of all, I got to skip school to go! Instead of wearing the quintessential Mickey Mouse ears, I got a sailor cap like my grandfather’s. I still remember riding Peter Pan’s Flight and I don’t think you can ever get It’s a Small World out of your head after riding it once. We also visited Epcot, but it was new back then and pretty dull. The most exciting moment happened when we got stuck — or at least had an unscheduled stop — on the ride inside the giant ball, “Spaceship Earth,” for a few minutes. My three daughters also had their fair share of Disney experiences. I’m not sure the girls were ever Disney fanatics, but we did have what seemed like every Disney princess movie on VHS, and they each went through their princess phase. One even had a “The Little Mermaid”-themed birthday party. So, the park naturally held lots of intrigue.

I’ve attended annual conferences in the area over the last five summers. One time, the entire family came; another time, my youngest and oldest daughters accompanied me and while I was in a meeting, they rode the Expedition Everest roller coaster at the Animal Kingdom about 20 times. Some of my favorite park attractions involve food. A smokehouse restaurant makes turkey legs with curing salt that takes the meal to a new level. And you can’t go to Disney World without eating a funnel cake. Since she’s been there, I’ve been sending Kaity Instagram posts with new treats for her to try and review. We went to visit in October and the ice cream-filled brioche sealed with a flat waffle iron type contraption was outstanding! While she may disagree with me, I think it’s a good thing she won’t be working directly inside the park. I imagine being there every day would cause it to lose some of its magic. I hope she’ll walk away from this experience with both fantastic memories and a sense of wonder anytime she enters the land of Disney.

MAYO MAGIC: THE SECRET TO JUICY THANKSGIVING TURKEY The turkey undoubtedly takes center stage among the many culinary delights that grace the Thanksgiving table. While there are plenty of methods for cooking a turkey, many chefs and home cooks swear by the “mayo method” as the best way to achieve a moist and flavorful Thanksgiving turkey — here’s why! Moisture Lock One of the biggest challenges when roasting a turkey is maintaining its moisture. The mayo method involves slathering the turkey with a layer of mayonnaise before roasting. Then lower the temperature to 325 F and cook for 15 minutes per pound.

Ingredients

• 2 lbs ground beef • 6 cups water

• 1/4 cup packed brown sugar • 2 tsp salt • 2 tsp beef bouillon granules • 1 tsp black pepper • 2 cups cooked long-grain rice • Chopped fresh parsley (optional)

• 1 28-oz can tomato sauce • 1 28-oz can diced tomatoes, undrained • 2 cups chopped green peppers

Directions

1. In a Dutch oven over medium heat, cook beef until no longer pink, breaking it into crumbles; drain. Add beef back to the pot and stir in all ingredients except the cooked rice. Bring to a boil. 2. Reduce heat. Simmer uncovered until peppers are tender, about 30 minutes. 3. Add cooked rice and simmer, uncovered, for about 10 minutes. If desired, sprinkle with chopped fresh parsley.
