INGREDIENTS

METHOD 1.

Preheat oven to 200°C on a grill setting. Add olive oil to pan and sear chicken skin side up for 8 minutes, then pop straight in the oven under the grill to sear the skin side (to avoid tearing the skin). Set aside. To the same pan, add more oil, fennel and potato to a pan, brown on both sides, remove from pan. Add garlic, fry for 2 minutes, then add white wine, cream and chicken concentrate, stir to combine. Add potato, fennel and chicken back to the pan, nestling into the sauce but not covering it, then add in fresh thyme. Place in the oven for 20 minutes covered, then 30 minutes uncovered. Remove from the pan and divide between four bowls. Enjoy!

Combine all ingredients in the Chicken section in a bowl. Set aside for 30 minutes.

Preheat oven to 180°C.

Combine sweet potato, baby potatoes, olives, olive oil and salt in a large roasting pan. Assemble all salad ingredients in a bowl set aside. Lay the marinated chicken thighs ontop of the potatoes in the large roasting pan. Pop the pan into the oven for 40 minutes to roast, flipping at the 20 minute mark to ensure chicken is evenly cooked. Remove from the oven and divide both the chicken and the salad between 4 bowls. Drizzle with honey & season to taste. Enjoy.

Add olive oil to a deep pot over medium heat and gently fry together the leek, carrots, celery, garlic, parsley stems and thyme until softened (about 5 mins). To the same pot, add shredded chicken, zucchini, Chicken Bone Broth Concentrate, parmesan cheese and water and simmer for a further 15 minutes. Add in uncooked noodles, cook for another 3-5 minutes. Taste and season. Add water to top up soup if needed. Taste and season with salt and pepper if needed. Stir in parsley leaves and baby celery leaves. Divide into 6 bowls to serve & enjoy!

Heat the oven to 180°C.

Meatballs: 500 g ground beef mince 1 tbsp Beef Bone Broth Concentrate Natural Beef

Combine beef mince, Beef Bone Broth Concentrate, all the spices, along with salt and pepper, egg, and half the chopped parsley into a mixing bowl. Combine, then roll into balls. Heat one 1 tbsp of olive oil in a pan and fry meatballs until cooked through, turning on all sides - this should take about 10 minutes. Meanwhile, gently warm your flatbreads in the oven for 5-10 minutes. Remove from the oven & smear one tbsp of greek yoghurt onto each the flatbread. Sprinkle over a little salt and pepper. Place on 2-3 meatballs on each flatbread Layer the cucumber ribbons, rocket and remaining parsley around the meatballs. Crumble over the feta and squeeze over lemon juice. Notes: If you preheat the oven and then turn it off and put the flatbreads in there they will be warm to serve when you are ready :)

Beef Cabbage Rolls

METHOD 1.

In a medium saucepan, add a little olive oil and brown the mince with a sprinkle of sea salt. While the beef is browning, cut your garlic, ginger, carrot, spring onions and mushrooms. To the browned beef add all the other ingredients except the wombok and plating sauce. Boil the kettle and add all the boiled water to a large saucepan. Add your wombok leaves to the boiling water and blanch for 30-45 seconds. Carefully pop your leaves on paper towels to dry a little prior to rolling. Roll each cabbage leaf up into a little parcel with a large dessert spoon of filling in it. Heat 4 tbsp of olive or peanut oil in a medium saucepan and fry the cabbage rolls for about 1 minute per side. Serve the rolls topped with the plating sauce and a side of rice and enjoy.

In a medium saucepan, add a little olive oil and brown mince with a sprinkle of sea salt. While the beef is browning, chop garlic, broccolini and spring onions and assemble the sauces. Boil the kettle and add noodles and boiling water to a saucepan for 3-5 minutes to cook. To the browned beef, add all the rest of the ingredients and cook for 3-5 minutes (the smell is incredible - your family will gravitate into the kitchen, aka flavour town). Add cooked noodles and stir through to combine and serve hot.

Roast Butterflied Lamb

Looking for a showstopper and table centrepiece for a Christmas feast? You just found it - Roast Butterflied Lamb with Bone Broth Gravy! The garlic, rosemary, paprika and lemon flavours infused in this lamb make for a mouth-watering main dish to remember this Christmas. And let’s not forget about the added nourishment of Bone Broth for gut and immunity support.

INGREDIENTS

METHOD 1.

Preheat oven to 180°C.

Large (2kg+) lamb leg butterflied (ask the butcher to do it for you!) 2 tbsp extra virgin olive oil

Take the lamb out of the fridge about an hour before you want to cook it to let it come to temperature ideal for cooking. Mix together your olive oil, paprika and lemon juice and give your lamb a shiatsu massage with the mix - getting into all the nooks and crannies that the butterflied lamb provides. On a high heat, sear lamb well on both sides (about 4 mins each side). Then take a sharp knife and stab some holes randomly into the lamb. Fill holes with garlic and rosemary sprigs (be careful lamb is probably a bit hot). Lay the lemon slices in a baking tray and top with the lamb. We baked the lamb folded in half - but if you have a big enough baking tray you can bake flat. Bake for approx 60-90mins (depending on how rare you like your lamb - see notes for internal temps).

9. Rest for at least 20 mins prior to slicing - while resting, make the gravy. 10. Reserve the pan juices and add to a medium saucepan along with the Chicken Bone Broth powder and butter. 11. Heat until bubbling and whisk in flour, cook for 2-3 mins (to cook the flour off). 12. Whisk in water and cook for 10 minutes or until your desired thickness 13. Slice lamb. 14. Serve hot gravy along with sliced lamb and watch it disappear in record timing. For the salmon: 1 lemon, sliced 400g fillet of Salmon (or 2 x 200g fillets) pinch of sea salt pinch of cracked black pepper 1 tbsp honey 1 tbsp Vegetable Broth Garden Veggie

Line a baking tray/dish with slices of lemon. Place the salmon fillet on top and season with salt, pepper, lemon juice and honey. Place in oven for 20 minutes (adjust time depending on the size of your salmon fillet). Mix all the salsa ingredients together and bowl.

For the salsa: ⅓ cup fresh parsley, chopped ¼ cup red onion, minced ⅓ cup dried cranberries ¼ cup toasted pine nuts
