INGREDIENTS
METHOD 1.
Preheat oven to 160 °C.
For the salmon: 1 lemon, sliced 400g fillet of Salmon (or 2 x 200g fillets) pinch of sea salt pinch of cracked black pepper 1 tbsp honey 1 tbsp Vegetable Broth Garden Veggie

Line a baking tray/dish with slices of lemon. Place the salmon fillet on top and season with salt, pepper, lemon juice and honey. Place in oven for 20 minutes (adjust time depending on the size of your salmon fillet). Mix all the salsa ingredients together and bowl.

For the salsa: ⅓ cup fresh parsley, chopped ¼ cup red onion, minced ⅓ cup dried cranberries ¼ cup toasted pine nuts
Serve salmon with salsa on top. Enjoy!
