Easy Waldorf Salad Boats

Ingredients: 2 cups of rotisserie shredded chicken ¼ mayonnaise ½ cup of Greek yogurt 3 Tbs. of apple cider vinegar 2 tsp. dried dill 3 scallions white and some green, sliced thin 1 crisp apple, diced 2 celery stalks, diced ¾ cup of seedless red grapes, halved 1 cup of chopped walnuts (optional for allergies)
½ cup of golden raisins 1 head of romaine lettuce Kosher salt & ground pepper
Directions: In a large bowl, stir the mayo, yogurt, vinegar, dill and the scallions together Add the chicken, apple, celery, grapes, nuts and raisins Season to taste with salt & pepper Serve in a romaine leaf Arrange on a favorite platter
