Herb Roasted Pork Loin

Ingredients:

3 pound pork loin, seasoned on all sides with salt and pepper 6 cloves of garlic, minced 2 Tbs. fresh rosemary, chopped

1 Tbs. fresh thyme, chopped 1 lemon zested and juiced 1/3 cup of olive oil, plus 2 Tbs. Kosher salt & pepper

Directions: Pull loin out of the fridge and let it rest for 45 minutes at room temperature Preheat oven to 375 degrees In a cast iron pan either seasoned or enameled on the stove top, heat pan well then add 2 Tbs. of oil Using tongs, brown the seasoned loin on all 4 sides for about 3 minutes per side Remove from heat, mix all other ingredients together, gently pour over the pork Roast in oven for 40 to 45 minutes, temperature test in center to 125 degrees Remove from oven, lightly tent with foil and let rest for 10 minutes Set on carving board, slice and serve
