Salade Nicoise

Ingredients: Spring mix greens 1 orange bell pepper, julienned 1 red bell pepper, julienned 1 red onion, halved and thinly sliced 1 can of whole new potatoes, rinsed and sliced 4 tomatoes, cut in quarters 4 hard boiled eggs, cut in quarters or sliced Whole black olives 1 can or jar of tuna packed in olive oil, drained White wine vinaigrette (White wine vinaigrette recipe included with the April Earth Day menu) Directions: In a large salad bowl, add the spring greens Arrange the peppers and the onion in a circular pattern Add the potatoes Add the tomatoes following the same pattern Add the eggs in between the tomatoes Add the black olives Add the tuna to the center Cover, and take along to picnic Shake and pour vinaigrette just before serving Bon Appetit!
