Couscous with Grilled Vegetables

Ingredients: 1 box 9 oz. of couscous 1 cup of cold water 2 red peppers 2 zucchini 2 yellow squash 4 scallions 3 handfuls of mixed fresh herbs, basil, mint, coriander, parsley (your choice of what you have on hand) Olive oil for grilling veggies Directions: Dressing 2 lemons juiced 1 lemon juiced to add if needed the next day 5 Tbs. good olive oil 1 level tsp. Kosher Salt and Pepper Mix dressing Place couscous in a large bowl, add 1 cup of cold water, cover with a clean kitchen towel and set aside Grill and skin peppers Cut zucchini and yellow squash in lengthwise slices. Brush with a bit of olive oil, grill. Brush oil, and grill scallions Once cooled, dice and slice veggies into bite size pieces Chop the fresh herbs. Fork separate the couscous in the bowl, add the veggies, herbs and dressing. Adjust the seasonings to taste. If serving the next day, taste test for more lemon juice if needed. Everything can be brought to a picnic and served at room temp Bon Appetit!
