Cherry Clafoutis recipe by Linda Rottman
Ingredients: 2 ½ to 3 cups of cherries, pitted 4 large eggs ½ cup of sugar
½ tsp. of vanilla extract ½ tsp. of almond extract 1/8 tsp. Kosher salt
¾ cup of flour 1 cup of milk Confectioners sugar, dusted Directions: Preheat oven to 350 degrees, bake for 45 to 50 minutes In a quiche or pie plate, spray with non stick, such at Bakers Joy Make sure that all the cherries have been pitted, (I always find a straggler) Place cherries tightly in a circle pattern all the way to the center In a separate bowl, add the eggs, sugar, vanilla, almond, salt, whisk Incorporate the flour in small amounts while continuing to whisk Stir in the milk Gently pour the liquid into the dish Bake, then top with a dusting of confectioners sugar Serve warm or at room temperature Note: You can substitute the almond extract for an equal amount of vanilla extract
