RUM BALL The perfect boozy holiday treat as they combine spiced rum, ginger snaps, pecans, sugar, and cocoa to create a crowd-pleasing chocolatey indulgence that everyone will love!
Ingredients:
• 3 cups crushed ginger snaps • 1 1/2 cups confectioners sugar, divided • 1 cup pecans, toasted and finely chopped
• 1/2 cup + 1 tablespoon spiced rum • 1/4 cup dark corn syrup • 2 tablespoons butter, melted • 1/4 cup cocoa powder

Prepare a large cookie sheet with wax paper. In a mixing bowl, combine the crushed ginger snaps, 1 1/4 cups confectioners sugar, and pecans; stir until well combined. Add the rum, corn syrup, and melted butter; mix until thoroughly combined. Use a small ice cream scoop to form dough balls and place them on the prepared pan. Chill the pan in the refrigerator for one hour, or you may freeze it until an hour before serving. Roll the rum balls in cocoa powder or confectioners sugar. Optionally, melt chocolate wafers and dip the rum balls in the chocolate.
