Method: 1. In Stephan, mix the praline, milk chocolate and cocoa butter until 40⁰ . 2. Temper at 22 ̊ to 24 ̊ , then warm to 26 ⁰ . 3. Mold the shell with tempered milk chocolate and pipe in then filling, then insert wafer and top with milk chocolate; leave to crystalise (cool down in chiller). See photo (1). 4. Wrap with gold foil and insert rectangle sticker; using chocolate wrapper machine. See photo (2).
