Summer is near, and the sun is shining! Floridians know that while the hottest time of the year is still on the horizon, the weather is gorgeous right now, so it’s time to get outside and soak up some vitamin D. Grab the entire family, friends, and neighbors and head out to enjoy these local events — you won’t be disappointed! Jacksonville Hot Air Balloon Festival Just north of us at the Northeast Florida Fairgrounds in Callahan is the site of the Jacksonville Hot Air Balloon Festival, held on May 13th. Whether you’re hitching a ride on a tethered hot air balloon or just admiring amazing hot air balloons, there will be plenty to see and do. For the younger generation, be sure to check out the rides and attractions in the kids’ zone. This event will feature live music, craft vendors, and lots to eat and drink! Jacksonville Jazz Festival From May 25th–28th, the downtown riverfront Jacksonville Jazz Festival will feature several award-winning jazz musicians on two different stages! The first day begins with a live jazz piano competition, followed by performances over the next three days. This four-day music festival is free and open to the public. It will be a great time for everyone, filled with food, drinks, and entertainment!

Palatka Blue Crab Festival On Memorial Day Weekend, May 26th–28th, hop in the car for about an hour’s drive south of Jacksonville to check out the Palatka Blue Crab Festival along the waterfront in downtown Palatka. At this family-friendly event, there will be national headliners, entertainment, food, drinks, vendors, and activities for everyone to enjoy.

GINGER PORK STIR-FRY

INGREDIENTS

• 1 tbsp cornstarch • 1 cup orange juice • 2 tbsp soy sauce

• 2 tbsp canola oil • 1 small onion, sliced • 1/4 lb fresh snow peas • 1/2 sweet red pepper, julienned • Cooked rice • Green onion, chopped (optional) • Sesame seeds (optional)

• 2 cloves garlic, minced • 1/4 tsp ground ginger • 1 lb pork tenderloin, cut into thin strips

DIRECTIONS

1. In a small bowl, whisk cornstarch, orange juice, soy sauce, garlic, and ginger until smooth; set aside. 2. In a large skillet over medium-high heat, stir-fry pork in oil until lightly browned, about 4–5 minutes. Remove pork and add onion, peas, and red pepper. Cook until crisp-tender, about 3–5 minutes. 3. Stir in orange juice mixture and pork. Bring to a boil, and then cook until thickened, about 2 minutes. Serve over rice. Garnish with green onion and sesame seeds, if desired.
