MEATLOAF

Ingredients

2 tsp salt ½ tsp pepper 1 tsp parsley flakes ¼ cup Parmesan cheese 2 large eggs, beaten 1 tbsp butter

2 lbs ground beef 3 slices rye bread 3 slices white bread 1 can beef broth 2 tsp minced onion 1 tsp mustard (from jar)

Instruction

Prepare the Bread Mixture: Break the rye and white bread into small pieces. In a large mixing bowl, pour in the beef broth and add the bread pieces. Let the bread soak for a few minutes. Add the Seasonings and Eggs: To the soaked bread, add the minced onion, mustard, salt, pepper, parsley flakes, Parmesan cheese, and beaten eggs. Mix well until fully combined. Incorporate the Beef: Add the ground beef to the mixture. Using your hands or a sturdy spoon, mix everything thoroughly but gently to avoid overworking the meat. Shape the Meatloaf: Transfer the mixture to a large loaf pan and shape it evenly. Place 1 tablespoon of butter on top of the loaf. Bake: Cover the pan with aluminum foil and bake in a preheated oven at 350°F for 1 ½ hours. Optional: Remove the foil for the last 10 minutes of baking for a slightly browned top. Serve: Let the meatloaf rest for a few minutes before slicing. Serve with mashed potatoes, vegetables, or your favorite side dishes.
