Council has developed a series of case studies to promote Stonnington businesses that are implementing a range of sustainability practices.
The Green Business Case Studies are a valuable way to communicate and encourage sustainability practices within local business. They are also an opportunity to recognise and promote business-led innovation in sustainability. “We have a responsibility to reduce our consumption and one way I saw to do that was to stay connected to our food source,” says Ingrid, owner at Ladro TAP. Ladro TAP is a Stonnington business with a mission. With an ultimate goal of zero waste, Ladro TAP has already reduced the amount of waste in its Prahran and Fitzroy restaurants by a huge 60% in the past five years. “I feel small and medium enterprises can make a real impact, especially in large numbers,” says Kristy, joint owner and director of Koto Hair.
Koto Hair is actively exploring sustainable business solutions and they’re innovating in the process. As a mother, Kristy found herself considering her children’s future, and felt she could make a difference by doing something about her own business’s impact. “I find it very gratifying to be connected to the local community and be part of something that is leaving the planet in a better or equal way to how we found it,” says Wayne, owner at Aunt Maggie’s. Wayne Ferrell spent a large part of his life working for large multinationals in the oil industry when he found himself disconnected from what was important to him – local communities. So in 2013, he established the organic grocer, Aunt Maggie’s, to connect communities around food and healthier eating.
