4. Make a well with the dry ingredients and in the middle of it add the wet: whole milk, eggs, vegetable oil. 5. Mix together to incorporate, but leave lumpy. 6. Fold in onion and jalapeño. 7. Pour batter into molds until ¾ full. 8. Bake in 350-degree oven for 20 - 25 minutes or until golden brown.

STUFFED ACORN SQUASH (VEGAN) By Imani Jackson Serves 5-6
DRY INGREDIENTS • 1 cup all-purpose flour • 1 cup Cornmeal • 2 tbsp Baking Powder
INGREDIENTS • 2 Tbsp avocado oil • 3 large or 5 small acorn squash, cut in half, seeds removed
• 1 ½ tsp Salt • ¼ cup sugar
• 1/2 bunch of kale, chopped • 1 medium onion, chopped • 12 oz mushrooms, sliced • 1 Tbsp balsamic vineagar • 2 cloves garlic, minced • 1 tsp salt • 1/2 tsp black pepper • 1 tsp garlic powder • 1 tsp onion powder
WET INGREDIENTS • 1 cup whole milk • 2 large eggs • ¼ cup vegetable oil
ADDITIONAL INGREDIENTS • ¼ onion, diced • 1 jalapeño, seeded and diced PREPARATION 1. Preheat oven to 350 degrees.
• 1/2 tsp cumin • 1 Tbsp agave
• 1 tsp cayenne pepper • 1 cup cooked quinoa • 3/4 cup dried cranberries • Abundant amount of fresh herbs • 1/4 cup fresh parsley, chopped, plus more for garnish • Handful of pomegranate arils (optional garnish)
2. Place a sheet of tinfoil over the top of a large baking sheet. Coat large crème brûlée molds with cooking spray on top of the tinfoil-covered baking sheet. 3. In a medium bowl, whisk together dry ingredients until evenly incorporated: flour, cornmeal, baking powder, salt and sugar.
