Gastronomes who know their stuff will fully understand that chefs and owners Thibault and Amaury are at the top of their league when one hears the fact that they both worked for Paul Bocuse in Lyon straight out of school, followed up by working in the French Pavilion at the Epcot Center in Florida! Originally from Lille in the north of France, the Mézière brothers trained at culinary school in Belgium and came to the shores of St Martin to open Bistrot Caraibes in 1994.
