Cheesy Tomato-Basil Stuffed Chicken

INGREDIENTS • 4–6 boneless,
DIRECTIONS 1. Preheat oven to 425 F. 2. Slice chicken down the middle horizontally (not cutting all the way through). 3. Spread pesto inside filleted chicken, then stuff with cheese and tomatoes before closing chicken, covering filling. 4. Place chicken in a large oven-safe skillet. Drizzle with reserved oil. 5. Set the skillet over medium heat; cook 5 minutes. 6. Add 1 1/2 cups tomatoes, garlic, balsamic vinegar, and season with chili flakes. Cook 2–3 minutes, then remove from heat. 7. Bake in oven for 7–10 minutes until chicken is cooked through and tomatoes burst. 8. Toss remaining 1/2 cup tomatoes with basil, thyme, salt, and pepper. 9. Serve the chicken topped with fresh tomatoes.

You heard right. It’s summertime in Florida, but somehow, the tourists missed the memo. Instead of waiting for winter, they’ve decided July is the perfect time to converge on our state — right into our left lane with their blinker on … forever. They’re here for the sunshine, the beaches, and the thrill of Googling “best fried shrimp near me” while changing lanes with no warning. Welcome to July as Cellphone Courtesy Month! We are all supposed to be especially mindful and respectful of others this month when using our phones. But at this point, it’s not even about the tourists. It’s about survival. Put your phone down. Set the playlist before you shift into drive. And if you’re texting and a tourist veers into your lane while FaceTiming their grandson — start praying. The Carmen Rule: Avoid Tourists at All Costs See a Buick with out-of-state plates doing 32 in a 55? Give them space. Is that SUV creeping across three lanes toward the exit ramp because Siri said, “Turn here?” Steer clear! Is that car parked in the middle of the road trying to take a selfie with a pelican? Brake early and often! They’re not malicious — just … confused. So, let’s do our part. Put your phone away. Expect the unexpected. And remember The Carmen Rule. See a Tourist? Steer Clear! If current trends continue, summertime highway hazards in Florida will only get worse. Summer tourism from July through September set a new record last year, with visitors up nearly 2% from 2023 to 35 million visitors, according to state tourism officials. All Floridians should be on alert: The state is no longer our own — not even in the summer!
