Ingredients: • 1 c cooked or canned chick- peas, drained, rinsed and lightly mashed • 8 oz seitan, finely diced • 1/2 c sliced roasted almonds • 1 c diced celery • 1/3 c chopped fresh dill • 1/4 c chopped scallions • 1 garlic clove, minced • 1/4 c vegan mayo • 2 tbsp red wine vinegar • Salt and pepper to taste
Directions: Place the chickpeas into a medium bowl and roughly mash them with a fork or potato masher. Add the remaining ingredients and stir until fully mixed.
