January 2025 is now in the history books. Can you believe we are already 8.333% through 2025? Where does the time go? It seems impossible that we have already turned the first month’s page on the new calendars. It also means we are one month closer to hurricane season. With all the cold weather we’ve experienced here in Florida this year, perhaps we might get lucky, and El Niño will make an appearance. It would increase the likelihood of cooler waters and reduce the chance of hurricanes. Wouldn’t that be a welcome change? Even if this comes to fruition, it doesn’t mean we’re out of the woods. Please don’t forget the challenges we faced just a few short months ago. Get your plans ready early this year, and don’t forget to start your flood insurance policy. I’m thrilled to share that I have officially graduated from the FBI Citizens Academy! This incredible experience provided me with a profound appreciation for and understanding of the men and women who dedicate themselves to protecting our communities every day. From insightful briefings to hands-on experiences like firearms training, evidence collection, and surveillance techniques, the program was eye- opening and transformative. If you or your teen are

wildfires have devastated countless homes, burning them to the ground. This year’s fires appear to be the most expensive in terms of insured losses in history. It’s not a good start to 2025 for global premiums. Our hearts and prayers go out to everyone in California who has faced the wildfires and the loss of property and business. Our thoughts also go out to my many friends in the insurance industry who are dealing with the influx of claims and heartbreak. We Floridians know all too well what they are going through and the long road ahead of them as they rebuild. Speaking of, the Tampa Bay Buccaneers snuck into the playoffs, hosted a home game, and then had a fourth- quarter meltdown that cost them the game. Now, they have a long road ahead until next season. Of course, we have the NFL draft to look forward to, but it’s not quite the same as real games on the weekends. Meanwhile, the Lightning have not had much success either, losing multiple hockey games during their January road trips. Oh well … Until next month,

Ingredients
• 1 cup chopped dark chocolate • 1/2 cup unsalted butter, melted • 3/4 cup granulated sugar • 1/2 cup almond flour
• 1/2 cup
chopped walnuts • 4 large eggs, separated • 2 tbsp cocoa powder
Directions 1. Preheat oven to 350° F and grease a springform pan with butter or nonstick spray. 2. Place chocolate in a medium bowl. Pour warm, melted butter over it, wait for 2 minutes, then stir until chocolate is melted and smooth. 3. Add sugar, almond flour, and walnuts and stir to incorporate. Stir in the egg yolks and set mixture aside. 4. In the bowl of a standing mixer fitted with the whisk attachment, whip egg whites on medium until stiff peaks form. 5. Fold 1/4 of the whipped egg whites into the chocolate batter. Repeat, 1/4 at a time, until egg whites are incorporated. 6. Pour batter into springform pan and bake for 30–35 minutes. 7. Remove from the oven and let it cool completely before removing from the pan. Dust with cocoa powder before serving.
