“This is from the Red Boat Fish Sauce property on Phú Quoc Island. They fish for anchovies, and they salt them there on the boat. Then they throw them in these giant wooden barrels and let them sit. Red Boat is in Costco and Trader Joeʼs and all these fancy restaurants in the States, but theyʼre as low-key as it gets. No stainless steel. Just big wooden barrels and salt, which also comes from the island.”
