Sparkling Wine Terms VINTAGE In short, the “year” or season of winegrowing. But vintage wine, by U.S. rules, is defined differently depending upon whether the wine label shows a lowly political appellation (like a state or county) or a stronger one (like a Viticultural Area). For wines with a Viticultural Area, the rule is 95%; for lesser appellations, the rule is only 85%: i.e., either 95% or 85% of the wine in the bottle has to have been harvested in the stated calendar year. DEMI -SEC A French Champagne term signifying that the product is medium-sweet. Not used in the U.S. See Extra-Dry. BLANC DE NOIR In short, the “year” or season of winegrowing. But vintage wine, by U.S. rules, is defined differently depending upon whether the wine label shows a lowly political appellation (like a state or county) or a stronger one (like a Viticultural Area). BLANC DE BLANCS A champagne or sparkling wine term referring to white wine made from only white (usually Chardon- nay and Pinot Blanc) grapes.

EXTRA DRY In Champagne, France this term usually means “extra sweet.” You knew that already if you’ve checked the Brut entry. Only in Sherry can you rely on the term to mean that the wine is really dry. This is one of the confusions that surround wine for no good reason other than to keep you on your toes. See Demi-sec. CREMANT A category of champagne or sparkling wine that con- tains less carbonation than standard champagnes or sparkling wines. Cremant champagnes are usually quite light and fruity but not often very bubbly.

About By Burgundian standards, Maison Albert Bichot is a large produc- er: smaller than Jadot, larger than Drouhin, perhaps similar in size to Bouchard Père & Fils. In its own right it owns 100ha (250 acres) of vines spread from Chablis to the Côte Chalonnaise. The company has been family-owned since 1831, and Albéric Bichot is the sixth generation to lead it. Approachable, open, and slightly mischievous, he is intimately acquainted with all of his company’s wines.

Made in France Our estates are located in each of Burgundy’s major viticultural regions, each one has a winery and cellar where a dedicated team vinifies and ages our precious wines.

About With the release of our Chateau Buena Vista wines, we are fortunate to uphold the legacy that was built by our illustrious founder, Count Agoston Haraszthy. These wines are a culmination of the storied history of Buena Vista… a story like no other. They honor the estate’s original foundation in the Napa and Sonoma valleys as well as the influence and prominence that Buena Vista Winery holds in establishing Napa and Sonoma as the preeminent wine regions of California. Made in California From spectacular sites in the Napa Valley to the varied terroir of Sono- ma County, our winegrowing team has brought together a collection of sites that express the culmination of The Count’s pioneering work in vini- culture. Through connections with family owned vineyards and growers, we source the highest quality grapes that best express the exceptional terroir of California. From the colder locations in the Petaluma Gap for Pinot Noir, to the high elevation exposure of Cabernet Sauvignon on Moon Mountain, we’ve followed his spirit of discovery and adventure in bringing together a family of wines that not only pay tribute to our past, but celebrate the uniqueness of Napa, Sonoma and Buena Vista.

About Founded at the beginning of the 19th century and located in its Art Nouveau building in Reims, Henriot is one of those rare, great Cham- pagne houses that have remained entirely family-owned since their in- ception. The identity of the house and its wines are strictly connected to chardonnay and its inborn elegance, with sobriety. If there is one Champagne house that incarnates the refined style of French elegant families, this is Henriot. Made in France The house owns 35 ha located in prestigious terroirs mainly in Avenay, Chouilly, Epernay, and Mareuil-sur-Aÿ. They rely on vine growers, mostly in grands and premiers crus, to supply the rest of the grape needed for an estimated yearly production of something less than 1.5 million bot- tles. They vinify all the terroirs separately, grouping two or three villages that share some similarities. All the vinifications are done in stainless steel thermoregulated vats to keep the pure expression of the terroirs. All the wines undergo full malolactic fermentation.

About In 1877 when cousins Ilario and Leopoldo Ruffino embraced their passion for winemaking by establishing a small winery in the town of Pontassieve near Florence, the region already had a centuries-old tradition of growing exceptional wine grapes. Even so, the two Tuscan natives felt certain that much of the area’s great- ness had yet to be revealed. Tuscany had been heaped with good for- tune-mineral-laden soils, the cooling influence of the Mediterranean Sea, the dry summers that wine grapes favor. And all those luscious, sun- drenched hills. Made in Italy When Ilario and Leopoldo Ruffino founded the winery in 1877, they knew that the secret to producing the best Tuscan wines meant having access to the best vineyards. With this philosophy in mind, Ruffino has, over the years, assembled a collection of top estates in Tuscany’s most important fine wine appellations. We view each of our vineyards as a jewel—pre - cious and of the earth. About The history of Borgo Magredo began in 1989 when Genagricola purchased a company boasting over 200 hectares in Grave del Friuli, the Municipality of Spilimbergo. The company’s agronomists immediately sensed this ter- ritory’s optimal potential for viticulture, dedicating part of this property to vine cultivation. The process began systematically by establishing a deep and lasting relationship with Rauscendo’s Vivai Cooperativi (Coop Nurs- eries), so to identity the clones that were most well-suited for this terrain, known for being full of gravel and stones (the famed ‘claps’ typical of the Grave area). Vines were gradually replanted according to modern logic and it proved possible to valorize both the vines and the territory’s unique- ness. Over the course of 20 years, more than 200 hectares of vineyards have been planted, including cultivations that are experimental in this ter- ritory such as Moscato Rosa or Pinot Nero, which later became a great classic. From an enological point of view, the cellar of Borgo Magredo is equipped with the most refined technologies for winemaking and refin - ing. This includes steel vats for maintaining desired temperatures during the wine-making phase, pneumatic presses for the grapes’ soft squeezing process and everything necessary for guaranteeing excellent production.

Made in Italy With approx. 200 hectares of vineyards in the Grave del Friuli DOC appellation, Borgo Magredo is one of the largest estates in Friuli.

Borgo Magredo Prosecco

$ 10 .67

BEST BTL

TASTING NOTES Borgo Magredo Prosecco is light-straw yellow in color with refreshing effervescence. Extra dry means that there is a bit of sugar left which makes it especially pleasant to the taste, initially cool and soft on the palate with fine bubbles, then giving way to fruity traces of peach and pear flowers. PAIRING While delicious on its own as an aperitif, Prosecco can also be served throughout the meal especially with seafood and shellfish, light salads, tempura and sushi.

About Jean-Louis Denois is widely considered a rising star of the Langued- oc. Growing up the sixth generation of a Champagne-making fami- ly, he ultimately found himself wanting to make his own way in wine. He painstakingly researched vineyards the world over, and found what he was looking for on the Languedoc’s southwestern fringes. There, in the upper Aude Valley at the foothills of the Pyrenees, the cool influence of the Atlantic gives his vineyards a terroir that captures the essence of Champagne without any of the attitude or fuss.

Made in France Interestingly, while J.L Denois’ vineyards are all in the Limoux Appella- tion, his refusal to use the Mauzac grape means he does not use the designation.

About The vineyards of Kim Crawford are located in outstanding, predominantly coastal sites. The grapes benefit from long days, clean sea breezes and crisp nights. In combination with New Zealand’s long and dry autumn sea- son, our grapes ripen slowly, which allows them to build flavor intensity as well as develop a sophisticated acidity. In the end, it is this unique combi- nation of factors–from regions and soils, to temperatures and growth rates– that give Kim Crawford a perfect balance of fruit and acidity. This ideal pairing of elements makes Kim Crawford more than just the perfect wine to compliment foods and occasions–it makes it the perfect wine to compli- ment one of the most stunning regions the world has ever known.

Made in New Zealand

The winery started out in a small cottage in Auckland, New Zealand and since its launch in 1996, the label has gained critical acclaim around the globe. We do things unconventionally, take risks, start things, and welcome different.
