As I approached the final ascent of my “29029” Everest climb in Mont- Tremblant/Quebec, Canada last month, I wasn’t just thinking about the summit. I was thinking about the children of JaxPAL, their futures, dreams, and the role education plays in helping them reach their own mountaintops. Education has always been a guiding force in my life. My mother was a teacher, and her influence shaped how I see the world. She taught me that learning isn’t confined to a classroom; it’s a lifelong journey. That truth echoed through every step of my climb and continues to guide my work today. During my Everest training, I wasn’t the teacher or the mentor. I was the returning student. I leaned on coaches and experienced guides who helped me prepare mentally and physically for the challenge ahead. Their wisdom reminded me that education comes in many forms across all ages and stages of life. Growth doesn’t follow a syllabus; it follows curiosity, courage, and conviction. Mentorship is one of the most powerful tools we have to grow, adapt, and succeed. The Everest Challenge deepened my appreciation for the role I now play in the lives of others. As a retirement coach, I get to pass on what I’ve learned, not just about finances, but about navigating change with confidence and clarity. Whether I’m hosting webinars, leading “Food, Friends, and Finance” events, or chatting one-on-one with our clients, I strive to be the kind of mentor who listens, encourages, and empowers. I often think of my mother during moments like these, when I’m guiding others, learning something new, or simply pausing to reflect. She didn’t just teach in a classroom; she taught through kindness, patience, and presence. Her lessons weren’t just academic; they were life lessons. If you simply enjoy your work or want to pursue another passion, like freelance writing or running a small home business, semi-retirement could give you a flexible schedule to work with as you plan this exciting new time.

TONY’S TURKEY TROT
INGREDIENTS • 5 lbs bone-in short ribs • Ground black pepper • 1 yellow onion, thinly sliced • 6 garlic cloves, chopped • 1 tbsp fresh thyme leaves • 1 cup white wine or broth
• 1/2 cup water • 1 cup heavy cream • 1 cup chopped kale (optional) • 4 tbsp salted butter, divided • 8 fresh sage leaves

DIRECTIONS
1. Preheat the oven to 325 F. 2. In a large braiser, season short ribs with black pepper. Scatter onion, garlic, and thyme over ribs. Pour in white wine or broth and 1/2 cup water. 3. Cover the braiser with a lid and roast for 2 1/2–3 hours. 4. Increase temperature to 400 F. Remove the lid, skim excess fat, and stir in heavy cream, kale, and 2 tbsp butter. Roast uncovered for 10–20 minutes. 5. Heat a small skillet over medium heat. Melt remaining butter and fry sage leaves until crisp. 6. Serve ribs hot with creamy sauce, garnished with sage.
