Hospitality Review - Jun 2017 - Digital Version

Drysdale apprentice, Harrison Lim, had the opportunity to work alongside Guillaume Brahimi and says he found it a really valuable learning experience. “It’s been a lot of fun. He’s a very down to earth, funny guy and he definitely loves helping out when you’re struggling a little bit. I’ve learnt a lot of things. Time management is the key one. Obviously we’re planning for a seven-course dinner so staying on task and getting everything completed on time is definitely the key thing for us to get done.” Tickets are still available for the remaining Great Chefs Series dinners and can be purchased at: www.greatchefsseries.com.au

The remaining events are: DRYSDALE LAUNCESTON: • Friday 7 July: Phil Wood – executive chef of Eleven Bridge (formerly Rockpool) • Friday 11 August: Mike McEnearney – Sydney’s No 1. Bent Street.

DRYSDALE HOBART: • Friday 28 July: Mark Best – Marque restaurant.

“The time spent in the chef ’s company has taught our students to be organised, and prepared for the challenges of a busy service period. The nerves leading up to service delivery soon give way to pride as the students plate up their dishes,” Will said.
