After spending the vast majority of their lives as part of the American workforce, many new retirees wonder how they will spend their days once they are no longer responsible for punching the time clock. As a good way to stay connected to the community, many have taken on local volunteer activities. If volunteering sounds like an enjoyable and rewarding way to spend some of your newfound free time, you should consider checking out these upcoming volunteer opportunities right here in Raleigh, NC! SOIL TROTTERS GARDEN CLUB If you pride yourself on having a green thumb or would like to learn more about horticulture, the gardens of the Atmosphere Community Arts Center are the place for you. You’ll be able to join other volunteers for weeding, planting, landscaping, mulching, and building new beds, all in the hopes of turning the grounds into a beautiful botanical garden. Regular group volunteer days are the first and third Thursday of every month, as well as the first Sunday. But volunteers are welcome anytime. ALL BREED ANIMAL RESCUE OF THE CAROLINAS This animal-loving organization hosts a monthly adoption event to help pair dogs in the community with humans who can provide them with their forever home. They ask for volunteers to help with these events each month by passing out information, setting up and breaking down the event, and watching the cute adoptable dogs while their potential human parents ask questions. WILDCAT STATION VOLUNTEER If you like spending time with little ones, then this volunteer opportunity at Walnut Creek Elementary School could provide you with many wonderful memories. In coordination with the school’s staff, you would serve the Walnut Creek Elementary community by performing day-to-day tasks, such as organizing clothing and food, watering and tending the community garden, transporting food to and from food banks and local grocery stores, and mentoring and tutoring students as needed. BURNISHED POTATO NUGGETS

INGREDIENTS

Inspired by Bon Appétit

• 5 lbs russet potatoes, peeled and cut into 2-inch pieces • 1/2 cup extra-virgin olive oil • 1/4 cup vegetable oil

• 8 cloves garlic, crushed • 2 sprigs rosemary • Kosher salt, to taste

DIRECTIONS

1. Heat oven to 425 F. 2. In a large pot, pour water over potatoes to cover by 2 inches. Salt water and bring to a boil over medium-high heat. Reduce heat and simmer gently for 10 minutes. 3. Thoroughly drain potatoes and let stand for 10 minutes. Toss gently and season with salt. 4. Meanwhile, combine both oils in a large pan and heat in oven for 10 minutes. 5. Remove pan from oven and add potatoes, turning to coat thoroughly. Return to oven and cook for 30 minutes, turning every 10. 6. Toss in garlic and rosemary and finish cooking for 8–10 minutes. 7. Drain and serve.
