5 Ingredients • 1/3 cup apricot preserves • 3 cups sliced strawberries • 2 cups greek yogurt • 1/2 cup low-fat granola without raisins (such as Kellogg’s) • 2 tablespoons slivered almonds, toasted Directions • Place apricot preserves in a mediummicrowave-safe bowl, and microwave at high for 10 to 15 seconds or until preserves melt. Add strawberries, and toss gently to coat. • Spoon 1/4 cup yogurt into each of 4 parfait glasses; top each serving with 1/3 cup strawberry mixture. Repeat the layers with the remaining yogurt and strawberry mixture. Top each serving with 2 tablespoons granola and 1 1/2 teaspoons almonds. Serve immediately. Healthy Recipe

Hi, my name is Joe Lucio. I grew up on the south side of Chicago, Illinois. I am new to the area, and have been living in Valparaiso a little over a year. My wife, Jamie, and I moved here last July. My mom is a nurse and when deciding on a career, I wanted to follow in her footsteps. I was going to school to become a nurse, however when working with the geriatrics population as a Certified Nursing Assistant, I became more interested in exercise and wellness for the elderly population. That’s when I became very passionate for physical therapy, and wanted to pursue my career in physical therapy. My favorite hobbies include fishing, playing sports, going to White Sox games, going to baseball card shows with my father and doing anything outside to enjoy a nice day. I look forward to meeting you!
