PUBLISHER’S NOTE SARAH NATHAN

I n the past two months - since we published this issue with this year six of Hellobali’s entrepreneur issue luminaries - I’ve been lucky to have travelled over to Bali. Six rising & inspiring leaders from Indonesia (Bali based) - share their roster of projects and what lies at the heart of their passion, plus what makes these young stars tick. Long are lists of their accolades and achievements, including Ratna Katarina, Andrew White, Feby Jabrik, Bayu Hendro, Agie Purwa and Shah Dhillon. Across the board are categories from hospitality to lifestyle, fashion and few others from which tribe members choose these high-achievements below the age of 40. One of the best things about Bali is that summer lasts much longer than in other parts of the world. And this year, the excitement seems to see no end. Spectacular events seems to follow one after the other; new cool places keep opening, and we are simply loving sharing everything with you. This issue, we also explore unique ideas that are making Bali the best island for your holiday. It is, of course, impossible to write about all of the great ideas this island has seen this year. But our editorial team has managed to collect some of the best, including works of art, ways of Bali residents are exploring their love of this magical island. On behalf of everyone at Hellobali, wishing you and yours a safe and happy holiday season. Here’s to another decade – of enriching Bali travel experiences that will leave you with precious memories, no matter how far from home you are – as always, look after yourself and each other.

Perched on a small street down in Drupadi area, the chic coffee shop/meeting spot shares space with Canaan Boutique, and served original ‘Tokyo-style’ brew using all-Indonesian beans; Sumatra, Gayo and Kintamani Bali to name a few. Aside from their delightful single-origin Bali Kintamani espresso blend, (the aero-pressed Ice Café Au Lait is a BLAST!) try the Kyoto Premium Matcha Latte as well; which are made using high-qualty matcha powder from Japan, served either hot or cold. It goes perfectly well with their 100% organic pastry; namely the red-bean sweet soft Anpan or creamy Cranberry Cheese bread. Subtle, exquisite and absolutely cozy; Rou brings the subtle influence of Tokyo’s chic hangout venue to stylish Seminyak. Don’t forget to visit their Umalas outlet as well!

TASTE EXPERIENCE 25

Following their successful stint with the adored Mexicola Group, Steve and Nico embarks to expand their wings with prominent side projects; including their latest venture in the heart of Berawa, Uni. The prestigious new 70-seater dining venue has been crafted in collaboration between Steven and Design by Design Assembly. The artwork which lines the walls is a part of another special collaboration, this time with French artist Yaz and his collection Fair Le Off. As for the food, an amalgamation of Asian inspiration and contemporary techniques, the menu is a foray through Japanese flavors (among others) and sophisticated dishes to match its equally sophisticated and rather unusual tipple. Shyingawayfromüber, intricatepresentation, Uni focused more on the flavor rather than full- blown appearance. Locally sourced seafood and vegetables are served with Japanese and French influences in a modern style. If you wish to try the best of Uni’s extensive dishes, try their 5-course tasting menu; which includes a selection of two appetizers, two mains and one dessert perfectly partnered with an experimentally brilliant drinks list.

Start with a nibble of Tuna Tartare Cone; a refreshing seafood goodness served in cheeky ice-cream shape paired with Vino n8 riserva frizzante pinot noir + chardonnay. Then move to Snapper Carpaccio for another Ocean delight, consisting of fern, shallot, and kemangi leaves served along vodka-based concoction of sweet vermouth, calamansi preserve and verbena. Main menus consists another batch of sea-based dishes to savor; from the soft and sweet Crab Lasagna paired with MollyDooker verdelho to Barramundi-Calamari with Bone Sauce accompanied by a glass of Desciendes de j palacios petalos mricia, and wrapped with a portion of Passion Fruit Soufflé paired with raw acacia hone mead. Elegantly delicious!

As seen above, the fares of Uni are well- crafted and thoughtfully paired with matched beverages to embrace the entire flavor with a touch of luxury. The carefully curated drinks also include an impressive array of sake, low proof cocktails, as well as the chance to match your dine to different teas rather than conventional wine.

COVER STORY INSPIRATION 39

S ometimes we are too afraid to even dream big, and most of the time it is because we have already limit ourselves with a mindset of ‘It will never going to happen’. But it certainly not what Bayu Hendro, the owner of Samsara Ubud had in mind when he created and build his empire. We will learn how he overcame all odds and prove that dreams, no matter how big, can come true. We really love Samsara Ubud, how did you come up with the idea of building a luxury resort-like that? Thank you. You are too kind! I must say that I am just a dwarf standing on the shoulders of giants. There are many legendary hotels around the world that I have had the opportunity to stay in, and they have inspired the soul and the concept of Samsara Ubud. My dream is simple. I do not want to have a big hotel. I am content with an intimate yet stylish boutique hotel with a soul.

Associates, has also been my role model with his often contrarian view on investing. He started from zero and has successfully grown his business into one of the biggest hedge fund managers in the world. Was there any moment that you felt like you wanted to quit? There were a few moments, especially in the first year, when I questioned whether I made the right decision to change my career (from Finance to Hotel Management). Quitting was, unfortunately, never an option for me as I have people reliant on me for their living. My team believes in my vision, and there is no way I would let them down. What was it, and how did you handle a stressful situation like that? It was very challenging and easily one of the darkest moments in my life. There were construction delays and the blow-out in the budget was significant, so it

really took me a while before I got to enjoy the fruits of my hard work. There were sleepless (and teary) nights and at some stage, I think it impacted my mental health a lot. I felt weak and like a failure. Then – I am grateful I have such a support system in my team, friends and family. They never stop believing in my dreams and have gone out of their way to support me in making my dreams become a reality. What do people need to know if they want to start doing property and hospitality business? Firstly, it all starts with the numbers. You need to know your numbers and understand finance or cash flows to ensure successful completion and management of your “baby”. It is interesting (and frightening) to know that nine out of ten businesses don’t last into their second year just because they

The fact that I am also a big fan of architecture and interior design helps the development of the concept as I wanted to create something that is simply timeless, yet elegant. With a competition that is pretty fierce in Bali, how did you create a unique selling point so Samsara Ubud can stand out in the crowd? I do not think we should be different for the sake of being different. It is good to have a very interesting concept, but in hospitality, I think customer satisfaction, quality service, and comfort are key to success. At the end of the day, we are in the business of creating experiences, so I always remind my team that luxury is multidimensional.

My team should definitely take the credit here! Not me! They have done very well in understanding what the guests want even before they want them. That they are not only friendly and genuine but also efficient! As the business owner, I believe my primary role is to create a culture where customer satisfaction is of the utmost importance.

It is not just what you see, what you smell, or what you hear that is important. But also what you feel. This is why when I meet strangers, I always say that Samsara Ubud is not just to be seen. It is to be experienced. How do you translate what people want into great services? My team should definitely take the credit here! Not me! They have done very well in understanding what the guests want even before they want them. That they are not only friendly and genuine but also efficient! As the business owner, I believe my primary role is to create a culture where customer satisfaction is of the utmost importance. I simply listen to what my team needs and try to provide it to them in a timely manner. That, I believe, is the beauty of being a boutique and independently-run hotel. Agility is truly our asset. I always say this to my team, “Put yourself in the shoes of our guests” and we know we have done very well when upon check out, the guests make the following comments, “I really don’t want to leave. Or oh I wish I had stayed longer!” Is there anyone in property business that inspires you? Why? I hope you don’t mind if I extend this question to other sectors as well. In the hospitality and hotel management sector, I find Isadore Sharp, the founder of Four Seasons. Also, Adrian Zecha, the founder of Aman, very inspirational. They are way ahead of their time, and their humility and attitude to growth have inspired me. Richard Branson is also someone I admire. He is not scared to challenge the status quo (i.e. other big and established businesses), yet he knows how to have fun and treat his employees very well. Ray Dalio, the founder of Bridgewater

don’t manage their cash flows well. Do your research well and develop your concepts. Surround yourself with people who have the right experience, and always check their credentials. Make sure they know what they are doing as your team will be your first support system. Once you have the team, think about the culture. What kind of corporate culture do you want to have? Finally, hang in there and stick to your vision! There will be people who will try to undermine what you are doing and at times like these, just focus on creating memorable experiences to your guests. They are the ones who pay the bills. What’s your most memorable moment where you feel proud of what you do and your achievements? I think the first day we finally opened to our guests was unforgettable. Oh, that mixed feelings of excitement and nervousness – I could feel it to this day! We just celebrated our second year anniversary a few months ago, and it felt unreal. I am just grateful my first baby is alive and thriving. The moment I decided to have a second baby (launching in June 2020) is also sentimental (or some call it crazy)! Can you give us your five success habits to inspire our readers? Stay active. Read as many books and write your to-do list and thoughts. Always make time to plan AND retrospect. Good night sleep is important (chamomile tea always helps) AND Most importantly, have a laugh! Life is too short.

COVER STORY INSPIRATION 41

B orn and raised in a family of successful clothing manufacturer didn’t make Ratna Katarina Kuhn confines herself inside her comfort zone; instead, she molded and weaves it into a prominent household business of her own. As one of two founders of PAULINA KATARINA—the other being her own sister, Surya Paulina, Ratna shows no sign of slowing down in expanding her brand in Bali and abroad. What drives the gorgeous entrepreneur to move forward with so much confident and zeal? Check out her insight on her exclusive interview with Hellobali below… What sparks your interest in the world of fashion? And what made you decide to take it seriously and built a career out of it? I have always loved fashion, and growing up I have always loved making my own clothes which was possible as I grew up in a family of clothing manufacturer based in Bali since the late 70’s. It was always the dream to start my own label. My parents have always included their kids in the family business, so it was the norm to help out during school holidays. Growing up we lived next to the factory, so essentially that was our playground. I was born and raised in Bali but moved to Australia for high school and university. Upon returning back to Bali after graduating, my sister and I decided to start our own label on the side while still continuing to work for the family business. We named it PAULINA KATARINA which is both of our middle names put together and is actually also the names of our great-great grandmothers from our mother’s side. It all started as a side project where we stocked our collection at boutiques throughout the island, and then to the bigger cities in Indonesia. We received amazing feedback and demand soared which gave us the confidence to take it more seriously. Are you self-taught or did you study fashion design? Do you always want to be a fashion designer growing up? I did not study fashion design, I have a Bachelor’s degree in economics and a Master’s degree in International Trade and Diplomacy. Growing up a part of me have always wanted to do something in fashion but I guess I was too young to know for sure and my parents didn’t want to limit my options so we figured studying something more broad was best. I am lucky I was exposed with the garment

manufacturing business from a young age which sparked my interest in fashion to begin with and gave me the experience and knowledge about the industry. But it was still extremely challenging, as starting a fashion brand is different to running a garment business. Paulina Katarina has become a household brand right now. How has your work evolved since you begin your own label? What keeps you going so far? I am extremely grateful for what we have achieved so far for the brand. We wouldn’t be able to be where we are today without all the support of our incredible customers and the hard work of everyone in our team. Personally, I think success is a process backed with hard work, and perseverance. Maintaining integrity, and consistency in our vision and the brand’s DNA are vital. Our team has obviously grown since we "I think success is a process backed with hard work, and perseverance. Maintaining integrity, and consistency in our vision and the brand’s DNA are vital" started the label but I am still very hands-on and involved in all aspects of the brand. I love what I do and cherish the people I get to work with every day. Please elaborate more about this ‘customer- based’ philosophy of Paulina Katarina. What’s the main concept of your brand’s design? And how did you maintain idealism through your creation? PAULINA KATARINA’s designs are eclectic and feminine with a sophisticated undertone. One of the main inspirations behind our designs are our incredible customers. When conceptualizing a new collection, I always envision them and ask myself what would a #PKGirl want to wear next? But while still staying true with our design identity. The #PKGirl has a bold yet playful approach to style while remaining forever chic. We also offer a wide range of styles; from those perfect for wandering around the island or for

beach club hangs to styles that take you from the office straight to the bar. We also carry a good selection of cocktail and evening dresses suitable for a night out or a special event. All of our products are produced locally and in-house here in Bali. Where / how do you find inspiration for your design? In terms of designing for a new collection I get inspiration from all of my surroundings. Beside the #PKGirl herself I am also inspired by street style and fashion trends from the international runway shows all around the world. Travelling also leaves me totally inspired with new ideas, colours, and mood. Particularly for our resort wear line PAULINA KATARINA WANDERLUST as the essence is vacation chic, combining designs that are versatile with effortlessly elegant appeal. Sometimes I just think of what is missing from my wardrobe whenever I want to go on a summer holiday and go from there. Alongside those collections; we also release a mini-series called PAULINA KATARINA ARCHIPELAGO. In which we attempt to embrace Indonesia’s rich heritage and to encourage the use of Indonesian prints as part of the daily activities and ready to wear pieces. We take inspiration from Indonesia’s most treasured textiles such as songket, batik and ikat. The inspiration behind each of the lines differ and from there I develop the concept and themes to explore. Paulina Katarina currently has a gorgeous flagship store in Seminyak; any expansion plan / projects in near future? Our readers would love to know! A few weeks ago we just launched a kidswear line called mini pk by paulina katarina. We also released a special Mother-Daughter collection which is perfect for you who like to match your outfits with your little ones - which is a blend between our womenswear and kidswear collections. We currently have a total of 5 boutiques in Bali, in Seminyak, Ubud and Canggu. We are hoping to expand to other parts of the island and hopefully also our own stand-alone boutique in Jakarta. Describe yourself in three words Passionate, Loyal and Driven
