grilled salmon

INGREDIENTS
Serves 4 1 . 5 lbs salmon fillet 2 tbsp olive oil Smoky Bbq blend ( or 3 tbsp of your favorite BBQ rub )

Method
Mix oil and smoky BBQ blend , pour over salmon Preheat grill to 450 Fahrenheit Place salmon skin - side down on the hot grill , cover and leave
for 8 - 10 minutes depending on thickness Flip salmon and cook for a further minute
* steak ( 1 ” thick ) cook on a hot grill for 3 minutes on each side , leave to rest ** halloumi ( slices ) cook on a hot grill for 2 - 3 minutes each side
Serve in a flatbread or naan with a salad of avocado courgette asparagus and basil salad
1 cucumber or zucchini / courgette , chopped 1 large avocado , diced 1 bunch asparagus , chopped 3 tbsp fresh basil ( torn ), 2 tbsp lemon juice 3tbsp olive oil Salt and pepper to taste
