Ingredients • 1 medium eggplant • juice of ½ a lemon • 1 large garlic clove, crushed • ½ teaspoon cumin • 1 tablespoon hemp gold seed oil • 1½ tablespoons tahini • sea salt and black pepper • toasted hemp seeds, parsley, and pomegranate seeds Method: 1. Place eggplant over a naked flame and cook for 15 minutes, turning frequently, until skin is charred and flesh is soft. 2. Cut eggplant open, scoop flesh into a bowl, and add lemon juice, garlic, cumin, hemp seed oil, tahini, sea salt and black pepper. 3. Serve topped with hemp and pomegranate seeds and parsley.
