CABBAGE SOUP

INGREDIENTS • 2 tsp olive oil

• 1 tsp salt • 1 pinch ground pepper • 2 can tomatoes, diced (14.5 oz each) • 3 tbsp apple cider vinegar • 16 oz chicken broth • 2 cups red cabbage, sliced into strips

• 1 piece green onion • 2 clove garlic, minced • 8 oz ground beef

DIRECTIONS In large stock pot, heat oil and green onions and garlic until tender. Add ground beef to stock pot and season with salt and pepper. Cook until browned. Stir in can tomatoes, apple cider vinegar, and chicken broth. Bring to a simmer. Add the cabbage and stir in. Cover and cook on medium low for about 30 minutes or until cabbage has softened.
