FUL MEDAMES

A beloved street food and national dish of Egypt, koshari is a hearty, carb-rich bowl combining rice, lentils, chickpeas, elbow macaroni, and crispy fried onions, all smothered in a spicy, tangy tomato-garlic sauce.

One of Egypt’s oldest traditional dishes, ful medames features slow-cooked fava beans mashed with olive oil, lemon juice, garlic, and cumin. Typically eaten for breakfast, it’s served with warm baladi bread, boiled eggs, and pickled vegetables.

The Egyptian version of falafel, ta’meya is made with fava beans instead of chickpeas, giving it a bright green interior thanks to the fresh herbs blended in. Crispy on the outside and soft inside, it’s a favorite sandwich filling, often served with salad and tahini.

This thick, green stew made from jute leaves is infused with garlic and coriander, giving it a distinct earthy flavor. Often served with rice and roasted chicken or rabbit, molokhia has a slightly viscous texture that’s beloved by locals and debated by foreigners.
