If you’re ready to jump into spring, check out these fun events. WINE & SEAFOOD FESTIVAL If you love wine and seafood, then you’re in for a treat. Coming back for its 10-year anniversary, the Wine & Seafood Festival is taking Lakeridge Winery & Vineyards by storm! On March 23, come enjoy a large variety of scrumptious seafood, live music, and entertainment, with the addition of winery tours and tastings.

Coming back for a 34th year, the Annual Florida Challenge Triathlon at the World Triathlon Destination is here. The event kicks off at 7:30 in the morning on March 18. Join the hundreds of participants or simply come to cheer them on. The race venue will be at Clermont’s Waterfront Park. The course will include swimming, biking, and sprinting, and there will be three different courses: the Intimidator Triathlon, Long-Distance Aqua Bike, and the Spring Triathlon. ZESTY ZUCCHINI ENCHILADAS

INGREDIENTS • 4 large zucchini

• 2 teaspoons cumin

• 1 tablespoon olive oil or ghee

• 2 teaspoons chili powder

• 3 cups cooked, shredded chicken

• 1 large onion, chopped

• 2 cloves garlic, minced

• 2 cups shredded cheese

DIRECTIONS 1. Heat oven to 350 F. In a large skillet, heat oil. Add onion, garlic, cumin, chili powder, and salt to taste. Stir to combine. Add chicken and 1 cup prepared enchilada sauce. 2. Use vegetable peeler to thinly slice zucchini. Lay out three slices, slightly overlapping, and spoon

chicken mixture on top. Roll the zucchini “tortilla” and place on baking sheet. Repeat until all zucchini and chicken is used. 3. Cover the enchiladas with remaining sauce and sprinkle with cheese. Bake 20 minutes, and enjoy!
