Study Shows How to Relieve OA Pain In a medical study, 83 patients with osteoarthritis were assigned to receive either hands-on physical therapy (treatment group) or a pill that actually did nothing to help their pain without them knowing (placebo group). Tests were done to measure how well the people were doing 4 weeks, 8 weeks and 1 year later. Fresh Garden Salsa It is now Fall, but my wife and I were getting fresh veggies from our garden to the end of September. It was our first year with a garden and it was awesome. Fresh ingredients are the best. Next year we are going bigger. This month I have a recipe inspired by our garden. As you all know I like to cook on a grill or a smoker. So, I’m sure you are wondering how I will work that into salsa? Here you go! First, the fresh ingredients from our garden: tomatoes, jalapeno peppers, red onions, and cilantro (see picture) I did have to get a few things at the store. Next, set up charcoal grill at low temperature only 150’ with some wood chips. The wood chips will smoke and add a little flavor to all the ingredients. You can use a gas grill to add smoke. Refer to past newsletters on the process... or give me a call. Don’t add veggies to hot grill. Looking to add flavor, not cook the veggies. While the grill is getting up to temp or you are waiting for temp to come down, chop tomato and onion in quarters, cut the jalapenos in half. Zest 1-2 limes and set aside zest. Cut limes in half for the grill. I also put some garlic gloves and corn on the grill. You can add anything you like in your salsa. (see picture) Once the temp of the grill is 150’ or less put the veggies on grill. Let them smoke for 20 mins to an hour. Longer if you like more of a smoky flavor. If you go longer, make sure the heat is low. Remove all ingredients from the grill. Cut out seeds (inside) of tomato. Dice the tomato, onion, jalapeno, garlic, squeeze out the lime juice. Add the lime zest. Chop the cilantro. Add coarse salt, cracked pepper, cumin, and if you like it spicy, ...cayenne pepper. I do not have amounts for the ingredients, you can make as much or as little as your like. Add the seasoning to taste. Again, add whatever you like to the salsa. I added some corn (see the picture), or you could add black beans? If you don’t like chopping and cutting, just add all the ingredients to the blender and done! Using the blender will produce thin salsa and chopping produces a more rustic salsa. If you use the blender, you could also can the salsa and save it for the winter. Fresh salsa is always good for a Patriots tailgate party! Serve the salsa as an appetizer with chips, in tacos, in fajitas, over chicken or grilled fish. Enjoy!
