Sustainability in the City: Stand for Tomorrow at TOMS
a musician, activist and community builder working on mental wellbeing and sustainable living for young women. Beyond that, it’s a larger call to action to our community to take a stand for what they believe in and make a positive impact on the future, big or small. We can all be change-makers! How does the Carnaby store shout about these important subjects? We are so proud of our TOMS London Community Outpost in Carnaby as it’s so much more than just a store. It’s a place for people to meet, share a coffee at our TOMS Roasting Co. coffee bar, join an event or learn more about our giving. Sustainable fashion is the way forward, and being conscious about how we buy and what we wear is the new style savvy. Recycling, upcycling, reusing, repairing, customising and even wearing biodegradable fabrics, organic fibres and clothing made from recycled plastic salvaged from the ocean is what it’s now all about. Carnaby is full of brands doing their best for the environment, and now’s your chance to get involved. Columbia Sportswear is Carnaby Street’s latest edition, with the 80-year-old US brand’s new European flagship shop housing its brilliant technical outdoor gear such as the OutDry Ex Eco Jacket, made out of 100% recycled fabric, including 21 plastic bottles. At Oi Polloi on Marshall Street, the forward-thinking brand Satta, which means ‘existence' or 'being’, focuses on small-scale production and uses eco-friendly fabrics like hemp. Compared to cotton, hemp is stronger, uses less water and improves the soil it's grown in. Back on Carnaby Street and Pepe Jeans London is bringing the sustainable factor to its denim with its ‘Wiser Wash’ process, an eco-revolutionary washing technology that uses zero toxic chemicals, with no water waste. What made you choose crab as the hero of your menu? Crab is hugely undervalued in the UK. We have an abundance of it across all of our shorelines and it’s so healthy, sustainable, versatile and delicious! Following the 'Blue Planet' effect, why do you think diners are becoming more interested in how sustainable their food is? People are becoming increasingly aware of the daily decisions they make and what impact the food they eat has on the environment. Consumers now demand a better understanding of the provenance of their food; not just with fish but vegetables and meat alike.
Being part of a new generation of chefs, how do you feel the industry is changing the way we dine? People are definitely eating out a lot more in comparison to the previous generation. However, with the rise of social media, consumers are always looking out for the next ‘big thing’, and as a result, restaurants need to do everything they can to retain their customers and convert them into regulars. If you could sum up Claw in one dish, what would it be? It would probably be the crab mac & cheese – it’s unique and indulgent. Where do you go to relax in Carnaby after a hard day’s work? I usually go to Two Floors on Kingly Street for a beer after work.

Dehesa is a member of the SRA (Sustainable Restaurant Association) with two stars. Tell us what makes you a sustainable restaurant. We are proud to be a sustainable restaurant and really believe in trying to better ourselves and help the environment as much as we can. We train our staff on our policies, which include using seasonal produce, recycling, separating food waste and watching our energy usage. Your menu changes seasonally; what sort of changes can we expect to see this year? Seasonality is very important to us. This year we will be working closely with our suppliers to offer our customers a regularly changing menu that really brings
jamones start the same way as all others, with black Iberian pigs feeding on acorns and being cured for around three years. However, ours is cured for five years. The flavour is incredible, sweet and nutty, and really unlike any other jamon or charcuterie you can buy. Often, there are so many options with tapas that people struggle to know what to order. What dishes would you recommend to a first-time tapas diner? For first-timers I always recommend starting with Padron peppers, croquetas and a charcuterie selection. From there, choose some classics, something you have never tried before, and never forget the patatas bravas.
Where do you recommend in Carnaby for the ultimate dining experience? My top three places to eat out in Carnaby are Shoryu Ramen, Dirty Bones in Kingly Court and our neighbours Jinjuu. There are plenty of amazing places in Carnaby where you can find great dining experiences.

Your menu is changed every eight weeks to reflect the seasonality of vegetables from organic British producers. Why did you introduce this? Most Indian households eat seasonally, and almost everyone buys from the local fruit and vegetable market. I wanted to maintain that traditional ethos of shopping from the Sabzi Mandi (vegetable bazaar) at Darjeeling Express. Seasonal and local produce tastes so much better! Very exciting that you were the first British chef to be featured on Netflix's 'Chef's Table'. How did you use your voice to promote sustainability? In the film we go to my family's mango orchard, and my father talks about the value of the soil and its importance to my family. I talked about the damage being done to the lives of farmers in developing countries who are being encouraged to grow specifically sized produce for British supermarkets. The farmer gets hardly any money and the middlemen make all the profit. The family of the farmer, who would previously be fed by produce grown in the land, struggle to make ends meet with the cash they get for their produce. All restaurants should buy locally and reduce the carbon footprint on their menu by reducing the number of items they fly down from distant countries. If you could choose a dish from your menu to best describe you, what would it be? At the moment the chicken chaap onnour from our special menu. It's a subtle, korma-like dish made with chicken cooked on the bone. It's only made in Bengal and Bangladesh, where my maternal family comes from. It's a fragrant, gently spiced heritage dish with royal roots.

What do you love the most about Carnaby, and why is it the perfect home for Darjeeling Express? I love the buzz of Kingly Court. You immediately feel transformed to another world. For me, the courtyard reminds me of my home in India in the summer, on the second floor with all the windows opened. In winter, the roof and beautiful lights remind me of the winter marquees of my family weddings. It fits so well with the food we serve!

What makes British oysters so remarkable? We live on an island, so are lucky enough to be
surrounded by seas and waterways. The cold waters slow down the oyster’s metabolism, producing crisp, meaty and sweet oysters. The flavour profile of an oyster is also influenced by the waters in which they’re grown, so British oysters develop different flavours as you move around the British Isles. For example, Lindisfarne oysters are creamy and plump, Jersey oysters are lean and briny, while Morecambe Bay oysters are grown in a salt marsh near land and therefore develop lots of minerality.
How do you incorporate sustainability into your menu, and why is this so important for you?
Can you share any exciting future plans for Wright Brothers Soho? We relaunched with a fresh new look at the end of 2018, and this year we are excited to showcase our terrace spaces and oyster-shucking cart.
The essence of sustainability is to preserve the fruits of the ocean for future generations, which is why we aim to buy seasonally.
Oysters are known to be the food of love; which Wright Brothers dish would you recommend for date night? I would definitely start with a platter of our mixed oysters, followed by a couple of small plates, so as not to distract from the conversation. Finish with a dessert to share and one of our delicious after-dinner cocktails.
What’s your favourite Carnaby restaurant – other than Wright Brothers?
I like Señor Ceviche. The head chef is my good friend and Wright Brothers alumni.

I'm Clare Every, also known as @thelittlelondonvegan , and I spend my time venturing around London searching for the best vegan food on offer. It’s been widely documented that veganism is the single biggest way to reduce our impact on the planet, and with so many incredible options now, I encourage everyone to give it a try.
DirtyBones,SecondFloor,KinglyCourt In a place where the menu is traditionally meat heavy, you probably wouldn't expect to find a vegan option, but these guys offer a plant-based meaty-style patty so that you can get involved with the burger action too. ShoryuRamen,GroundFloor,KinglyCourt I lose count of how many times I've tucked into Shoryu's spicy vegetarian ramen. It's beautiful. Both of their veggie ramens are listed as vegetarian, but they're actually totally vegan. Rosa'sThaiCafE,23GantonStreet From summer rolls to comforting Thai green curry, Rosa's Thai Cafe more than adequately caters to the vegan community. One of the best-known Indian restaurants in London now offers an entire vegan menu, and in my opinion, it would be rude to go there and not order the gunpowder potatoes. Dishoom,22KinglyStreet Again, not the first place that springs to mind for a vegan, but it's a slick venue and their mock duck dishes are pretty impressive. TheDuck&Rice,90BerwickStreet Probably the best-known veggie/vegan restaurant in London, Mildreds often has a queue outside, and with good reason. From salad bowls to mushroom and ale pies, they've got it all. I recommend ordering the Sri Lankan curry. It's superb! Mildreds,45LexingtonStreet I could quite happily live on dumplings for the rest of my life and Yauatcha absolutely nails them. Imagine something that could make fresh water, create the world’s most delicious food, generate sweet, fresh air and provide millions of jobs.

The ocean is our respite, and it gives us life. Every second breath you take is made by the ocean. It regulates climate and stores carbon. The ocean makes the clouds that make the rain and snow to give us fresh water. Around the world, over a billion people rely on the ocean for daily protein. The ocean covers more than 70% of the Earth’s surface, and yet less than 4% is under protection. Today there are 500 dead zones – places where no life exists in the ocean – totalling the size of the UK. More than 90% of the ocean’s top predators are gone, 60% of fish stocks have collapsed and half the coral reefs are gone. The ocean is making less oxygen than it used to. This should concern everyone. No ocean, no life. It’s time to show the ocean some love.
The problem is that few people know that the ocean is under attack, and equally bad, ocean conservation is critically underfunded. Only 3% of the world’s charitable giving goes to the environment, and a mere 6% of that goes to the ocean. The hard truth is that the ocean needs more champions.

Why is sustainability so important to your business ethos?
We have a duty as a young brand to show our customers that you can make the decision to be as sustainable and responsible as possible. Hopefully smaller companies leading the charge might encourage bigger brands and corporations to try harder (or at all). We only have one planet and one chance to try and fix it.
Tell us more about your refill stations.
Customers can fill up our reusable glass bottles with their favourite Bleach London shampoo and conditioner at the salon when they run out. Prices start from £18 for the original purchase then £10 pounds per refill, so it works out as cheaper as well as being better for the environment.
What’s your favourite Bleach product?
They’re all my babies! At the moment I’m in love with the glass refill bottles and the beer range, which uses beer extract and is packed full of nutrients to restore damaged hair. You're well known for creating exciting and experimental hair looks and colours. What’s your favourite colour or colour combo? I love orange and red hair. We’ve also been seeing loads of patterns on shaved heads, which is big on social media too. It’s fun that hair colour is still continuing to be experimental and bold after all these years. Your branding and salon style are so individual and identifiable. How would you describe the Bleach boy and girl? We believe that dyeing your hair should be fun and an extension of your personal style. We put our own personalities into the names and colours and hope that everyone else likes them too. Sometimes they’re old in- jokes that take on a life of their own, like Awkward Peach or Blullini. I believe that if you enjoy and put love into making or doing something, then it’ll be more likely to resonate with a wider audience. As long as it keeps being fun and we aren’t comparing ourselves to other brands or trying to fit into a box, I think we’ll continue to be original.
How did Bleach come to be?
Bleach started as a one-chair pop-up in WAH Nails on Kingsland Road in Dalston nine years ago, after my home kitchen salon Sylvester Salon became too popular and I got sick of cleaning hair dye out of bowls.
What's the best thing about having a salon in the heart of Soho?
Soho is the beating heart of London. There’s so much history and personal memories for everyone that works there. We love the bustle of Berwick Street and the diversity of the neighbourhood. It’s nice to have seen it progress from a popular nightlife area to a place for young, independent brands whilst still maintaining its personality.
What do you do to ensure Bleach is a sustainable eco-friendly business?
We work really hard to make sure we’re as eco-friendly as we can be. We manufacture in the UK and Europe and try to avoid importing things from far away to help reduce our carbon footprint. All our products are vegan and we use recycled cardboard and plastic in our packaging. We’re also now offering product refills in our salons as part of our pact to reduce plastic. We’ve also removed brushes and bowls from our bleaching kits and are releasing a reusable coconut alternative to plastic.

What sets Sandqvist apart from other brands when it comes to sustainability?
Sustainability is such a hot topic. How is Oliver Spencer doing its bit?
Sustainability is complex and there isn’t a one- fit solution. We’ve focused our attention on using high-quality and low-impact materials such as organic cotton, European linen and un-dyed wools. We are also focused on reducing the footprint of our packaging.
Since the beginning of Sandqvist’s journey, we have always had sustainability in mind. It has always been in our DNA to make things durable and fix what´s broken.
Tell us about an exciting new collection for 2019.
Tell us what’s new at Oliver Spencer.
2019 marks the launch of the Sandqvist Light Collection. Fresh and crisp in colour and style, the collection includes sustainable materials including organic cotton, recycled fibres and vegetable-tanned leather.
This season is a big step in the right direction in regards to environmental sustainability. 30% of the materials used fall into our ‘ecological’ bracket which means they are either organic cotton, European linen or BCI (Better Cotton Initiative) cotton.
What makes the Soho store unique among your other European stores?
What is your view on the new trend for sustainable fashion?
Scandinavian design and British style goes hand in hand, you guys are our best customers – trendy, well dressed and know what you want. We love Soho and its mix of creativity, business, tourists, good food and eclectic characters.
It is imperative that sustainability is a focus and not a trend. It needs to be a journey of continual improvement which becomes the norm.
