Prepare a rocks glass with a sugared rim. Shake all ingredients with ice and strain.

Combine Jam Shed Shiraz with the orange zest, ginger, spices and sugar. Stir orange zest, ginger, spices and sugar into the wine. Cook over a moderate heat until simmering. Remove from the heat, cover and leave to stand for 10-15 minutes. Reheat gently before ladling into mugs.

Gently heat to mull. Add the orange zest and spices, and once simmering, turn down to a low heat for 25 mins. Ladle into mugs.
