• 2 celery sticks, sliced, leaves reserved • 3 cloves garlic, peeled and minced • 1 bunch parsley, chopped • 1 tablespoon thyme • ½ store-bought organic cooked chicken, or 2 poached breasts, shredded • 1 zucchini, chopped • 3 tablespoons Nutra Organics Native Herbs Chicken Bone Broth Concentrate • 2 tablespoons grated Parmesan, or dairy-free nutritional yeast • 1.5 – 2 litres boiling water • 2 packs ramen noodles • 1 teaspoon pepper METHOD In a large saucepan, gently fry leek, carrots, celery, garlic and thyme in olive oil until softened. Add chicken, zucchini, parsley, celery leaves, broth concentrate, Parmesan or yeast, and water. Simmer for 15 minutes. Add noodles and cook for a further 5 minutes. Serve immediately.
