Serving the mission of St. George and St. John the Divine with flour like a pancake batter. You must have a good piece of meat at the fire, take a stew-pan and put some dripping in, set it on the fire; when it boils, pour in your pudding; let it bake on the fire till you think it is nigh enough. Set your stew-pan [on a downturned pan] under your meat, and let the dripping drop on the pudding, and the heat of the fire come to it, to make it of a fine brown.” Modern-Era Yorkshire Pudding: Ingredients 3 large eggs 3/4 cup milk 3/4 cup flour 3/4 teaspoon salt 1/2 cup melted butter (Rendered beef or pork fat can be substituted for butter for a more traditional flavor.) 50K for 50K Chrisoula Van Oirschot is marking her 50th birthday with a meaning- ful challenge—running 50 kilome- ters to raise $50,000 for Vanier Children’s Mental Wellness. Her “50K for 50K” run takes place on April 26, 2025, in London, Ontario. Instead of a traditional celebration, Chrisoula is dedicating her milestone to a cause close to her heart: children’s mental health. As an educator, she has seen firsthand how many children struggle and how critical resources like Vanier’s DASH program can make a difference. “Every child deserves to feel safe, supported, and valued,” she says. Vanier provides essential mental health services for children and families in London, and Chrisoula’s goal is to ensure these programs remain accessible to those in need. “This isn’t just about running—it’s about showing kids we care,” she adds. She invites the community to support her mission by running, volunteering, or donating. Every contribution helps build brighter futures. To get involved, visit the event website (www.raceroster. com/events/2025/98838/50k-for-50k) or contact Chrisoula at bymeraki.ca@gmail.com.
