Desserts & Baked Goods New York Cheesecake by Jeff Butler Ingredients: For the Base: 1 package of graham crumbs (any brand) Butter and sugar as per the instructions on the graham crumbs package For the Filling: 5 (8-ounce) packages of cream cheese, at room temperature 4 ounces unsalted butter, at room temperature 4 ounces sour cream (14%), at room temperature 4 ounces Greek yogurt (5%), at room temperature 1¾ cups granulated sugar 5 large eggs 2 egg yolks Zest of 1 lemon 1 tsp vanilla extract Directions: Preheat the oven to 375°F. Step 1: Butter the bottom and sides of a 9-inch removable- bottom cheesecake pan. Step 2: Mix graham crumbs with a pinch of salt and sugar. Add butter and fully incorporate. Press evenly into the bottom of the prepared cheesecake pan and bake until the crust is golden brown and set, about 15 minutes. Remove from the oven and transfer to a wire rack to cool for about 10 minutes. we wish you and yours a Very Merry Christmas, and all the best for the new year. Step 3: In a large stand mixer, beat the cream cheese and butter together until fully incorporated. Add the Greek yogurt and sour cream, and mix until fully combined. Then, add the sugar and mix until light and smooth. Beat in the eggs, one at a time, on low speed until fully incorporated. Beat in the remaining egg yolks. Add the lemon zest and vanilla extract, and mix until combined. Step 4: Wrap two pieces of industrial-grade foil around the bottom and sides of the cheesecake pan to prevent water from leaking in during the water bath. Transfer the cheesecake pan to the center of a roasting pan, then pour the filling into the cheesecake pan. Step 5: Carefully transfer the roasting pan to the oven and pour boiling water into the roasting pan until it comes halfway up the sides of the cheesecake pan. Lower the oven temperature to 350°F. Bake for 1 hour, or until the top of the cheesecake is lightly golden brown, the edges are set, and the center jiggles slightly. Turn off the oven and let the cheesecake sit for 30 to 40 minutes, or until the oven is cooled. Remove the cheesecake from the oven and water bath, and let sit for another 30 to 40 minutes, or until cool enough to transfer to the refrigerator. Remove the foil and chill the cheesecake in the refrigerator for at least 8 hours. Step 6: To remove the cheesecake from the pan, press gently around the bottom of the pan until the cheesecake loosens and slides up. Using a base to support the bottom of the pan, slowly remove the outer shell of the pan. To remove the cake from the base plate, flip the cake upside down using a piece of parchment paper to cover the top. Place a dinner plate over the top and flip the cake. While the cake is upside down, use a hot cloth to warm the base plate and loosen the cold butter. Use a small, thin knife to slide between the base of the cake and the base plate. Slide the knife around the bottom until the base plate comes off. Step 7: When cutting the cake, use a clean, warm knife for each cut. Wipe the knife clean of any filling with a warm cloth between each cut. You can also run the knife under hot water for a couple of seconds between cuts to allow it to glide smoothly through the cake, avoiding any catching or cracking.
