DIRECTIONS 1.Preheat your oven: Set it to 400°F (200°C). Prepare the Squash: Place the halved acorn squashes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast in the preheated oven for about 25-30 minutes or until the squash is tender. 2. Prepare the Filling: While the squash is roasting, mix the cooked quinoa, Brussels sprouts, carrots, kale, cranberries, and pecans in a large bowl. Drizzle with olive oil and balsamic vinegar. Toss until everything is well coated. 3. Stuff the Squash: Once the acorn squashes are done roasting, fill each half with the quinoa and vegetable mixture. 4.
