34 COVER STORY Pinisi has been around for hundreds of years, since the 14th century. Phinisi were the engineless trading ships comprising a tall, powerful, topsail-ketch rig with unusual, permanently standing gaff booms, known to be used for trade. But as the time flew, the use of this vessel also shifted into luxurious sailing trips around the world. With powerful engines, five-stars hospitality services, and epic interiors, we can now sail through Indonesia’s most beautiful islands and have the experience of a lifetime.

50 SPECIAL FEATURE What if you can change the world using rainwater? That’s exactly what this company is all about. Saving Bali from water depletion by making healthy drinks from rainwater. While functional beverages such as kombucha are not meant to replace a healthy diet, they became popular because of the health benefits of the ingredients, how it’s made, and the byproducts that occur as a result of the process. We look deeper into Kore Culture Lab’s fermented beverage business and how they not only help Bali from water depletion but also helping Bali street dogs find their forever home.

Such as the inseparable bond between the rise of tourism with more garbage in our essays section. For this issue cover story ( Pg .38) Hellobali talks about The High-End Expedition - a recognized global leader in luxury small-ship expeditions, Aqua Expeditions explores the world’s most wildlife-and culture-rich destinations aboard best-in-class vessels of stylish contemporary design. Yet, compared to, or while we are in the ocean, we are merely a drop of worthlessness. It is impossible to ignore the enormous impact the pandemic has had, and at the time writing, a second wave is perceived to be highly likely. Affluent and influential individuals are seeking to better themselves on their own terms and that health is becoming amore critical factor in their decision-making. They are consuming more consciously and giving away more of their wealth to maximize their social impact. We’re also witnessing desire for technologies that deliver a more human experience. THE PINNACLE OF FIVE GENERATIONS: CODIGO 1530

in another friend from the Cabo course to be an investor as well—none other than the King of Country himself, George Strait, the brand really got its footing. The brand name, 'Código 1530' has a special meaning that honors both the way the tequila produced and where it originated from. The second half of the brand name comes from the fact that their tequila is produced five minutes outside of Tequila in a town called Amatitán. The city was founded in 1530 by the Spaniards and has a slogan of “donde todo empezó,” which means “where it all began,” an allusion to the fact that tequila was first produced in this part of Mexico. So what makes Código 1530 different? First, the yeast that used to ferment the juice comes from their family bakery that has been in their family for a couple generations. It’s bread yeast and not alcohol yeast and takes four days to ferment instead of eight hours.

The brand also uses the best agave available to produce their tequila. They are also not shying away from modern technology. Rather than using the traditional tahona method where the agave is crushed and the fibers remain with the juice for a period of time, the team has chosen to extract the juices by shredding the cooked agave. This enables the distillery to solely withdraw the juices without any of the pulp. There are several notable variants of Código 1530: Blanco, which smooth and had just the slightest burn and Reposado, with more intense flavor and kick. There are also two variants of premium tequilas; namely Añejo and Origen, which have complex and refined flavors that come from the wine barrel aging method.

Launched in late 2016, Código 1530 has actually been produced for five generations, but the brand didn't come out until quite recently. The tequila-based liqueur has been critically acclaimed around the world for the flavour, and backed by powerful names in the entertainment industry. Made in the region of Los Bajos, Código 1530 is 100% blue agave tequilas. Its complex flavor profile; crafted with great care over time – combines the refined palate of an aged tequila with many of the tasting notes typically found in aged whiskeys and fine cognacs. The story behind the establishment of Código 1530 is quite interesting, to say the least. As mentioned before, the Los Bajos tequila has become a 'sleeper hit' for liquor enthusiast around the world, and gain international recognition when a resident of Cabo San Lucas, co-founder Federico “Fede” Vaughan would routinely share this ‘nameless’ tequila with his buddies over a game of golf. Businessman Ron Snyder, the former CEO of the Crocs Footwear company, was one of those friends. But rather than just enjoy the fine spirit, the two decided to form a company. It was when Fede and Ron brought

In Bali, seafood is obviously a kind of easy-to-found delicacy; with lots of traditional restaurants offering their own take of ocean-induced menus, but few could do it as refined and thoughtful as Seasalt.

Lavishly built by wooden and stone materials on the ground floor of Alila Seminyak Resort, the fully air-conned indoor area of Seasalt is designed to resemble a stylish beach residence. It enacts an opulent ‘homey’ beachside vibe while the outdoor area comprises of vibrant open kitchen, convenient chairs and elevated wooden decks where one can freely gaze onto the ocean and feel its gentle tropical ambience. The menus of Seasalt pay a great tribute to the ocean’s natural produces, but with a fine twist of Japanese infusion. Focusing on sustainability, the restaurant sources seafood that is wild-caught and ethically harvested from the waters around Indonesia, and partners with Bali Sustainable Seafood, a local social enterprise that provides high- quality seafood that is sustainably fished. Dishes are seasoned with traditional organic Kusamba sea salt from East Bali, where a small community of salt farmers continues a centuries-old tradition of producing 100% natural salt by sun and wind evaporation.

will be able to navigate the heart of the Coral Triangle and fabled spice trade route in ultimate luxury and exclusivity. “Since founding and starting Aqua Expeditions thirteen years ago, it has been my mission to create intimate, small ship expeditions to remote parts of the world. We started in the Peruvian Amazon, followed by the Mekong focusing on boutique river expeditions, but the call of the ocean was too strong” said the Founder & CEO of Aqua Blu, Francesco Galli Zugaro. The Italian-American entrepreneur first travelled to East Indonesia six years ago on a scouting trip for histure operations in the region, and he thought that its stunning beauty, monumental history, abundant wildlife and sense of adventure had to be experienced in order to be believed. What better way to do it in style, and on a personalized basis, served by an expert team on board? We always knew our two brands had a natural fit, so once Aqua Blu launched in November 2019, our conversations soon led to action” Francesco explains.

So what next for Aqua Blu? Francesco spilled that on top of special charters and NIHI partnership, the superyacht also offers year-round departures in East Indonesia that sail the region’s most prized destinations, including Komodo National Park, Spice Islands, and Raja Ampat across seven and 12-night itineraries. “We are also always tweaking our itineraries to add in ‘wow factor’ once-in-a-lifetime excursions such as swimming in a lake full of stingless moon jellyfish, cave kayaking Misool’s famed subterranean networks, trekking up Mount Pindito for a bird’s eye view of the surrounding majestic karst islets, and even impromptu swims with whale sharks” said Francesco. “In terms of expansion for the company, we will be launching our second ship in the Amazon later this year with the brand-new Aqua Nera, setting a new standard for luxury cruising in the Peruvian Amazon once again” Well, it seems that their guest will never fall short of amusing activities to experience. So, have a splendid voyage with Aqua Blu!

SURFING

Bali gained its fame as an exotic surfing island way before it became a fantastic holiday destination everyone knew and loved. All the wonderful upscale resorts and venues aside, Bali remains the best place for wave-riding experience. The Bukit peninsula has arrays of world-famous surfing spots; such as Balangan, Dreamland, Bingin, Impossibles, Padang-Padang, and Uluwatu on the western side. If you are an absolute beginner who wish to grip the basics, you can opt to surf at Kuta beach first, where many surf schools have sprung up, mostly with international grade instructors and services.

KITE SURFING This one demands great physical strength and mental toughness, so if you think you're up for the challenge, give kitesurfing a shot! Combines the fundamental elements of surfing, windsurfing, gymnastics, paragliding and wakeboarding; kitesurfing is an escalated form of kiteboarding that lets you ride the waves with a surfboard and a kite. Maintaining the windflow is the key here, and also try to hold on to your grip. Wear your wetsuit and life jacket on! KITE & SURF BALI ON LINE SHOP Kite Beach, Jl. Pantai Merta Sari, Sanur, Kec. FLYBOARDING Have you ever thought 'what it's like to be Iron-Man'? Go and experience it by yourself (well, partly) through Flyboarding activity! Invented by a former jet-ski champion, Franky Zapata, flyboard combines a surfing board and a Jet Ski motor for an unforgettable amusement. You’ll be wearing a boot attached to a surfing board with a hose connected to a motor, usually from a water vessel. The high water pressure will propel you up into the air – yes, very much like a superhero saving the day. The basic stance in flyboarding is standing upright, but the more experienced flyboarders can even dive into the water like a human dolphin and do some incredible acrobatic stunt. Don't try it if you don't know what you're doing!
