RECIPE

Pumpkin Roll

Ingredients

Cake • 3/4 cup gluten-free flour • 1/2 tsp baking powder • 1/2 tsp baking soda • 1/2 tsp ground cinnamon • 1/2 tsp pumpkin pie spice • 1/4 tsp ground allspice • 1/4 tsp salt

4. Beat in vanilla extract and pumpkin purée. 5. Using a spatula, gently fold in sifted flour mixture. Pour batter into the prepared pan, evenly spreading the batter with a spatula or knife. 6. Bake about 13–15 minutes, or until a toothpick inserted in the center comes out clean and the cake, when lightly pressed, springs back. 7. Immediately after removing the cake from the oven, invert the cake onto a clean dish towel. Carefully remove the parchment paper from the bottom of the cake and sprinkle lightly with flour or powdered sugar; roll the cake up with the towel while it is still hot and pliable. Place on a wire rack to cool. Filling

• 3 large eggs • 1/2 cup coconut sugar • 1/2 tsp vanilla • 2/3 cup canned pumpkin purée • Extra flour to sprinkle on the counter for rolling

Filling

• 6 oz light cream cheese or Neufchatel cheese at room temperature (NOT fat-free) • 6 oz fat-free Greek yogurt (Fage brand is great.) • 1 tsp vanilla extract

• 3 tbsp100% maple syrup • 1/8 cup powdered sugar (optional, for sprinkling) • 1/2 cup chopped walnuts (optional)

In a large bowl, beat cream cheese, yogurt, and vanilla extract until light and fluffy. Add maple syrup and beat until smooth; fold in walnuts (if using).

Pumpkin Roll 1. Heat oven to 375 F, and place an oven rack in the center of the oven. Spray a 15x10-inch baking pan with nonstick spray, line it with parchment paper, then spray a little more nonstick spray and lightly flour the parchment paper. 2. In a large bowl, sift together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, allspice, and salt.

Refrigerate for at least 1 hour.

Assembly 8. Unroll the pumpkin cake, spread filling on the cake, and re-roll. Transfer to your serving platter. 9. Cover and chill in the refrigerator for a few hours or overnight. (You can serve this immediately but chilling it overnight sets the filling and makes it easier to slice.)

3. Beat the eggs and sugar together with electric or hand mixer. Beat on high speed for 5 minutes, or until thickened.

This is considered a special occasion recipe.
