2 1/2 ounces gin or vodka 1/2 ounce dry vermouth Ice Lemon peel twist or olives, for garnish
METHOD
Before you build your martini, put your martini glass in the freezer to chill.
Place 2 1/2 ounces gin or vodka and 1/2 ounce dry vermouth in a mixing glass.
Add cubed ice and stir for 30 seconds until the martini is chilled. Strain the drink into your chilled martini glass. Pare a lemon peel, and express (pinch) the back of the lemon peel over the martini. Rub the lemon peel around the rim of the glass and drop it into the glass. Alternatively, garnish with speared olives.

TOASTED TOMATO & BASIL PESTO WRAP

This is a really tasty toasted wrap that you can enjoy for a quick nutritious lunch. Roasting the tomatoes, peppers and onions makes them really sweet, tender and delicious.
INGREDIENTS
A handful of cherry tomatoes or one whole tomato – cut into small chunks 1/2 red onion- quartered 1/2 red pepper – cut into small chunks 1 tsp good quality olive oil
25 g grated cheese 2 tsp of basil pesto 2 wraps
METHOD
Preheat the oven to 180 fan. Place the chopped vegetables onto a baking tray or oven-proof dish and drizzle over the olive oil. Roast for 15 minutes until all the peppers and tomatoes are soft to touch. Meanwhile grate your cheese and set aside. Just before the vegetables are done, heat a dry frying pan on a medium heat. Take the roasted vegetables out of the oven and set aside Place your wraps on a chopping board and spread one teaspoon of basil pesto onto each wrap, divide the roasted vegetables and add to the wraps. Sprinkle the cheese onto the wraps and carefully fold the wrap so it looks like a half-moon shape. Place one wrap onto the frying pan and cook for one to two minutes each side, until the wrap is nicely toasted.

Just in time for Mother’s Day, this berry syrup is lightly sweetened with a touch of honey, allowing the natural sweetness of ripe, juicy berries to shine through. It simmers down in just minutes into a rich, flavorful topping—perfect for treating mom to a delicious pancake breakfast!

METHOD
In a medium-size saucepan, over medium-high heat, add the berries, water, and honey. Bring mixture to a boil, stirring to combine ingredients. Turn the heat down to a simmer and mash the berries with a potato masher. Once mashed, whisk in one teaspoon of arrowroot to the berry mixture, cooking over low-medium heat (simmer). Place a top over the pan and allow to simmer until the mixture is thick (syrup consistency). This only takes a few minutes. Remove from the heat and stir in 1/2 teaspoon of vanilla extract. Serve the mixture warm over waffles or pancakes or store in a mason jar for later use. Keep syrup stored in the refrigerator. This syrup can also be frozen for later use.

However, success in real estate investing takes more than just purchasing a home and putting up a “For Rent” sign. It requires careful planning, research, and a clear understanding of your goals. Before jumping in, determine the purpose of your investment. Are you looking for a steady stream of rental income, or are you aiming to renovate and flip the property for a quick profit? Your answer will guide your decision-making process and help you choose the right type of property. Location is one of the most important factors in real estate. Look for areas with strong rental demand, low vacancy

Rhubarb Simple Syrup 2 cups rhubarb chopped (about 4 stalks) 1 cup sugar 1.5 cups water
Rhubarb Gin & Tonic 4 oz Gin juice of 1 lime 6 oz rhubarb simple syrup 10 oz tonic water lime sliced, for garnish
METHOD
Rhubarb Simple Syrup In a saucepan, combine rhubarb, sugar, and water. Bring to a boil over medium-high heat, then reduce heat and simmer 20 minutes Remove from heat and allow to cool completely Strain syrup through a sieve, discarding fruit solids, or saving for another use

A light-yet-rich cheesecake, creamy but not dense-creamy like New York cheesecake. Topped with the most utterly incredible strawberry sauce topping – it’s a match made in heaven!

Add vanilla, sour cream, sugar and lemon zest. Beat until just combined. Add eggs one at a time, beat in between until just combined (five seconds each), and after the last one, beat just until the egg is fully incorporated. Pour into prepared crust. Bake for 55 minutes. The top should be a very light golden brown, not cracked, and near perfectly flat. It should jiggle slightly when you gently shake the pan.

CHEESECAKE CRUST 2 cups graham cracker crumbs 8 tbsp unsalted butter, melted
CHEESECAKE FILLING: 500g cream cheese, softened 2 tbsp plain flour (all-purpose flour) 1 tsp vanilla extract 1/2 cup sour cream (full fat) 1 - 1/2 cups caster sugar (superfine sugar) Zest of 1 lemon 3 eggs, at room temperature STRAWBERRY TOPPING: 500g strawberries, half diced and half halved 2 tbsp lemon juice OR water
Cool the cake in the oven with the door open eight inches, then refrigerate for four hours in the pan.
Remove sides of pan. Use overhang paper to slide cheesecake off the cake pan. Then slide the cheesecake off the paper. STRAWBERRY TOPPING: Place chopped strawberries, vanilla, sugar and lemon juices in a saucepan. Stir then bring to simmer over medium heat. Simmer for 10 minutes until strawberries breakdown. Mix cornstarch with water, then add into saucepan and stir. Add halved strawberries and cook for one minute to soften. Sauce should be syrupy – remove from stove and cool. Will thicken as it cools.

METHOD
CAKE: Preheat oven to 160C/320F (standard) or 140C/295F (fan/convection). Get an eight-inch spring-form cake tin. Turn the base upside down, butter lightly and place a square piece of parchment/baking paper on the base. Then clip into the spring-form pan – excess paper will stick out. Butter and line the side of the pan. CHEESECAKE CRUST: Add graham crumbs in a food processor. Add butter, briefly blitz until dispersed and it resembles wet sand. Pour into the prepared cake tin. Use a spatula to roughly spread it out over the base and up the walls. Use something with a flat base and vertical edges to press the crumbs up the wall almost to the top of the sides, and flatten the base. FILLING: Use a mixer or beater to beat the cream cheese until just smooth, no longer than 20 seconds on speed four. Add flour, beat for five seconds on speed four until just incorporated.
Once cool, stir. Adjust thickness to make it the right “oozing” consistency with a tiny touch of water.
Spoon onto cheesecake so it’s covered with a single layer of strawberries. Flip strawberry halves so they are face-down. Refrigerate two hours.
Slice and serve with remaining strawberry sauce!
